Ancho Glazed Salmon with Sweet Potatoes

Preheat broiler. Scrub potatoes
- 2 medium sweet potatoes
- 1 tablespoon sugar
- 1 teaspoon salt
- 1 teaspoon ground cumin
- 1 teaspoon ground ancho chili pepper or chili powder
- Olive oil cooking spray
- 4 5 - 6 ounces skinless salmon fillets

African Chickpea Soup

Sauté garlic in hot oil in a large saucepan over medium heat 1 minute; add 1 tsp
- 2 garlic cloves, chopped

1. Remove the seeds and stems from the chiles and soak them in very hot water until soft, about 30 minutes or so
- 5 dried ancho dried chiles
- 1 small onion, peeled and chopped
