Lemon-Butter Green Beans w/Pine nuts

1.) Wash and drain green beans well and pat dry
- 1/3 lb fresh green beans, ends trimmed, blanched in boiling salted water
- 1 tbsp unsalted butter
- 1 tbsp minced shallots
- 1 tbsp pine nuts
- 1 tsp fresh lemon juice
- Pinch of salt
- Pinch of freshly ground black pepper
French Hot Chocolate (Chocolat Chaud)

- 1/8 tsp baking soda
- 1/4 tsp ground ginger
- 1/8 tsp salt
- 1/3 cup chopped candied ginger pieces

Scalloped Red Potatoes and Onions

- 1 Cup Buttermilk 1/2 Tsp salt
Stuff Leg of Lamb w/Balsamic-Fig-Basil Sauce

1.) Preheat oven to 400 degree F (200 degree C)
- 1/2 cup prunes, coarsely chopped
- 1/4 cup currants
- 2 tbsp creme de cassis liquer
- 1 1/2 tbsp fresh rosemary, minced
- 1 1/2 tbsp fresh thyme, minced
- 1/2 tsp coriander, grounded
- 1 1/4 tsp salt
- 1 tsp freshly ground black pepper
- 1 (4 lb) boneless leg of lamb, rolled and tied
- 1/2 cup chopped roasted and salted almonds
- 2 tbsp fresh mint, chopped
- 3 cloves garlic, cut into thirds
- 2 tbsp olive oil
- 1/2 cup balsamic vinegar
- 5 tbsp butter
- 3 tbsp honey
- 1/3 cup stemmed Calimyrna figs, thinly sliced
- 5 tsp fresh basil, chopped
- 6 leaves of mint
- 6 leaves of basil
Ginger Chicken

Preheat oven to 425 degrees F
- 1 shallot, finely chopped
- 1 pc (1") fresh ginger, peeled and finely chopped
- 2 tbsp fresh lime juice (from 1 lime)
- 1 tbsp soy sauce
- 1 tbsp plus 2 tsp extra-virgin olive oil
- 3 medium red onions, unpeeled and halved
- 2 red peppers, cored, cut in half lengthwise and seeded
- 8 boneless, skinless chicken-breast halves (about 3 1/2 lbs)
- Salt and black pepper
- 1/2 tsp ground cumin
Flat Belly - Spicy Baked Chicken w/Squash and Walnuts

- 1 1/2 tbsp olive oil
- 2 tbsp water
- 2 tbsp packed dark brown sugar
- 1 1/2-2 tsp ground ancho chile pepper
- 1 1/2 tsp ground cumin
- 1/2 tsp dried oregano
- 1/2 tsp salt
- 1/2 butternut squash, peeled, seeded, and cubed
- 4 boneless, skinless chicken breast halves (4 oz each)
- 1/2 lb small think skinned potatoes, quartered
- 1 lg sweet white onion, cut into thin wedges
- 1/2 cup walnut halves, coarsely chopped

- 1/2 cup light brown sugar
- 2 tbsp butter
- 3 lg eggs
- 1 tbsp pure vanilla extract
- 3 cups cubed white bread, preferably French Bread, no crusts
- Melted butter, cinnamon sugar, brown sugar, or plain sugar for baking cups
- Optional additions: Raisins or diced fresh apple, chocolate chips, chopped pecans or walnuts, and berry jam.
