- Non stick vegetable oil spray
- 2 1/4 lbs russet potatoes, cut lengthwise 3x1/3x1/3" batons

- 2 tbsp flat-leaf parsley, chopped
Pumpkin-Obsessed Vanilla-Glazed Scones

- 1/2 c cold lowfat 1% buttermilk
- 1 large egg
- 1 tsp pure vanilla extract

- 1 c white whole wheat flour (king arthur)
- 1 c unbleached all-purpose flour, plus more for the work surface

- 1/4 tsp ground nutmeg

Chicken Marsala

- 8 skinless, boneless chicken breast halves
- 1/2 cup all-purpose flour
- 1 teaspoon poultry seasoning
- 1 tablespoon butter
- 1 tablespoon olive oil
- 1/4 cup Marsala wine
- 1 cup chopped portobello mushrooms
- 1 cup chopped onion
- 1 teaspoon dried rosemary
- 4 slices mozzarella cheese
Tomato and Eggplant Fusilli

1.) In a large lidded skillet, heat the oil over medium heat
- 1/4 cup olive oil
- 4 cups cherry tomatoes
- 1 lg eggplant (about 1 1/4 lb), cut into 1/2" cubes
- 1 lg clove of garlic, sliced
- 3/4 tsp salt
- 1 lb whole wheat fusilli
- 1 cup fresh basil, hand torn
- 1 heaping cup (4 oz) shredded ricotta salata
