Cupid's Favorite Cookie Sandwiches

With an electric mixer on medium speed, beat butter and sugar 2 minutes or until fluffy
- 1 stick of butter, at room temp.
- 3/4 c granulated sugar
- 1 tbsp vanilla extract
- 2 eggs, at room temp.
- 1 tbsp cornstarch
- 2 cups white whole-wheat flour
- 1 tbsp powdered sugar
- 1/4 cup no-sugar-added raspberry or strawberry jam
Flat Belly - Stir-Fry Walnut Shrimp

- 2 tbsp medium-dry sherry (optional)
- 1 tbsp reduced sodium soy sauce
- 1 lb peeled and deveined shrimp (thawed if frozen)
- 1/2 cup walnuts, coarsely chopped
- 2 tbsp canola oil
- 2 tbsp chopped fresh ginger
- 1/2 cup reduced-sodium fat-free chicken broth
- 3 scallions, whites thinly sliced diagonally, greens diagonally sliced 1" thick
- 1 tbsp honey
- 1 tsp rice wine vinegar
- 1 1/2 tsp cornstarch, dissolved in 1 tbsp water

- 3/4 cup Heavy Whipping Cream
- 1/4 cup Chicken Stock
- 3 tbsp Lemon Juice
- 3/4 pd Angel Hair pasta (also called capellini)

- 1 pd Raw Medium Shrimp, peeled and deveined
- 1/2 cup (loosely packed) chopped parsley
- 1/4 cup (loosely packed) chopped chives
- Zest of a lemon
- 1/2 cup Freshly Grated Parmesan Cheese
- Add garlic optional
