Corn Casserole

1. Preheat oven to 350 degrees F (175 degrees C)
- 2 eggs, beaten
- 1 (15 ounce) can cream-style corn
- 1 (8 ounce) container sour cream
- 1/4 cup butter, melted
- 1 (15.25 ounce) can whole kernel corn, drained
- 1 1/2 cups shredded Cheddar cheese
- 1/2 cup chopped onion
- 1 (4 ounce) can diced green chilies, drained
- 1 (8.5 ounce) package dry corn muffin mix
Zucchini Fries

In a large bowl, sprinkle the salt and pepper on the sliced zucchinis, drizzle the Olive oil and toss to coat well
- 1 Large Zucchini, 1/4” sliced
- 2 Eggs, beaten
- 1/2 Cup all-purpose flour
- 1/2 Cup Italian seasoned Panko bread crumbs
- Salt and Pepper to taste
- 2 Tbls extra virgin Olive oil
- Vegetable oil for frying
Sweet and Tangy Coleslaw

n a bowl add the cabbage, carrots, apples, mayo, vinegar and jelly
- 2 cups green cabbage, thinly sliced
- 1 1/5 cups red cabbage, thinly sliced
- 1 large carrot, shredded
- 1 golden delicious apple, peeled & julienned
- 1/2 cup mayo
- 3 tablespoons apple cider vinegar
- 1/4 cup apple habanero jelly
- Salt
- Pepper
Rainbow Fruit Salad

1 Prepare the fruit. 2 Combine all the ingredients for sauce and mix
- 1 large mango, peeled and diced
- 2 cups fresh blueberries
- 2 bananas, sliced sliced
- 2 cups fresh strawberries, halved
- 2 cups seedless grapes
- 2 nectarines, unpeeled and sliced
- 1 kiwi fruit, peeled and sliced
- Honey orange sauce
- 1/3 cup unsweetened orange juice
- 2 tablespoons lime juice
- 1 1/2 tablespoons honey
- 1/4 teaspoon ground ginger
- 1 dash nutmeg
Cajun Deviled Eggs

Shell cooked eggs. Cut eggs lengthwise into halves
- 12 hard boiled eggs
- 1/4 cup mayo
- 1 jalapeno pepper, seeded & finely chopped
- 1 tab prepared mustard
- 1 teas cayenne pepper
- 1/4 teas salt
- paprika
BBQ Chicken in slowcooker

mix BBQ sauce with all ingredients listed under it
- 4-6 pieces boneless skinless chicken breasts (i threw them in frozen... even easier!)
- 1 bottle BBQ sauce
- 1/4 c vinegar
- 1 tsp. red pepper flakes
- 1/4 c brown sugar
- 1/2 - 1 tsp. garlic powder
Sausage Balls

Combine all ingredients and shape into balls the size of walnuts
- 1 lb Bulk Sausage (Hot Or Mild)
- 2 c Sharp Cheddar Cheese Grated
- 3 c Bisquick
- 1/3 c Water
Giblet Gravy

Step 1: In a medium saucepan, place giblets and egg and cover with water
- 1 egg
- 4 tablespoons rendered fat from roasted whole turkey (may substitute 4 tablespoons butter)
- 4 tablespoons flour
- 4 cups chicken or turkey stock
- 2 teaspoons poultry seasoning
- Salt and pepper to taste
Beef Nachos Grande

1. Preheat the oven to 375 degrees F
- On the Side:
- 1/2 pound ground beef
- 1 teaspoon chili powder (Spanish blend)
- 1/2 teaspoon salt
- 1/2 teaspoon dried minced onion
- 1/8 teaspoon paprika
- 2 tablespoons water
- 8 "restaurant style" corn tortilla chips
- 1/2 cup refried beans
- 1 1/2 cups shredded Cheddar cheese
- 1/2 cup shredded Monterey Jack cheese
- 1/4 cup diced onion
- 1 large red jalapeno (or green)
- Sour cream
- Guacamole
- Salsa
Beef Pitas

1. Place meat in slow cooker
- 1/2 lb. beef or pork, cut into small cubes
- 1/2 tsp. dried oregano
- Dash of black pepper
- 1 cup fresh tomatoes, chopped
- 2 Tbsp. fresh green bell peppers, diced
- 1/4 cup nonfat sour cream
- 1 tsp. red wine vinegar
- 1 tsp. vegetable oil
- 2 large pita breads, heated and cut in half
