Walnut, French Lentil And Herb Gravy

A creamy, cream-free sauce full of umami flavor
- Makes about 3 1/2 cups
- 1 tablespoon olive oil
- 2 bay leaves
- 1/3 cup French lentils
- 3 cups water
- 2 tablespoons butter
- 1 shallot, minced
- 2 cloves garlic, minced
- 1 teaspoon dried sage or 3 or 4 fresh sage leaves
- 1/2 teaspoon dried thyme or 1 teaspoon fresh
- 2 teaspoons fresh rosemary, chopped
- 1 tablespoon flour
- 1 cup walnuts, toasted and roughly chopped
- Splash of white wine
- Pinch of Nutmeg
- Dash tamari (a sauce made with fermented soybeans, similar to soy sauce, but with a smoother, less-salty flavor; you can substitute soy sauce)
- Dash balsamic vinegar
- Salt and plenty of pepper
Balsamic Onion, Bacon, and Goat Cheese Pizza

Directions FOR THE DOUGH: Dissolve the yeast and 1 teaspoon of sugar in ½ cup of warm water in a small bowl
- FOR THE DOUGH:
- 1 (1/4 ounce) packet active dry yeast
- 2 teaspoons sugar
- 1 1/2 cups warm water
- 3 cups all-purpose flour
- 1 teaspoon kosher salt
- 2 tablespoons olive oil
- FOR THE PIZZA:
- 2 red onions, thinly sliced
- 1/4 cup balsamic vinegar
- 2 tablespoons olive oil, plus more for drizzling
- 1 teaspoon kosher salt
- 1/2 teaspoon freshly ground black pepper
- 8 ounces thick-cut bacon, diced
- 1/2 recipe pizza dough, recipe above
- 1 cup marinara sauce
- 1 1/2 cups shredded mozzarella cheese
- 4 ounces goat cheese
Sweet Potato Casserole

Preheat oven to 350 degrees Combine sweet potatoes and next 8 ingredients in a large mixing bowl
- Topping:
- 3 cups cooked sweet potatoes
- 1/2 cup sugar
- 1/4 cup milk
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 stick butter, melted
- 1/3 cup all-purpose flour
- 1 teaspoon freshly grated orange zest
- 2 tablespoons fresh orange juice
- 1 cup chopped pecans
- 1 cup brown sugar
- 4 tablespoons butter, melted
- 1/3 cup all-purpose flour
Jean's Lamb Meatballs

- 1 pound ground lamb
- 1/4 cup golden raisins
- 1/4 teaspoon gound cinnamon
- 1 and 1/2 teaspoons Kosher salt, but I use much less
- 1/4 teaspoon pepper
- 1/2 cup bread crumbs
- 1 large egg, beaten
- 1 bunch scallions, white and light green parts sliced

- Authentic Pizza Dough:
- 2 1/2 cups Bread Flour, plus additional for work surface
- 1 cup 105 Degree Water
- 1 Envelope Active Dry Yeast
- 1/4 cup Honey
- 1/4 cup Extra Virgin Olive Oil
- 4 tsp Salt
- Toppings:
- 2 lbs Onions; Peeled, cut in half lengthwise and thinly sliced
- 1/2 stick Butter
- 2 Tbsp Extra Virgin Olive Oil
- 2 Tbsp Sugar
- 3 Large Pears, cored and sliced in half lengthwise
- 1 Tbsp Fresh Squeezed Lemon Juice

- 1/2 cup softened butter
- 6 tbsp sugar
- 6 tbsp brown sugar
- 1/2 tsp vanilla
- 1/4 tsp water
- Beat until creamy
- Beat in one egg
- Sift and add
- 1 cup + 2 tbsp flour
- 1/2 tsp baking soda
- 1/2 tsp salt
- 1/2 cup nuts
- 6 oz Chocolate Chips
Rebecca's Spinach Artichoke Dip

Mix together, Cook at 350 degrees for at least 30 minutes
- 2 cups artichokes (I use canned ones) divide lengthwise
- 2 cups mayonnaise light ( I use light made with olive oil) ( I use 1/2 cup less)
- 2 cups freshly grated parmesan cheese
- 2 cups slightly steamed spinach (if you are in a hurry you can use frozen spinach which is good but not great)
Cranberry & Rosemary White “Christmas” Sangria

- 1 Braeburn apple
- 1 heaping cup Cranberries, Fresh
