Melis Family Minestrone Soup

- 1/2 cup dried peeled fava beans
- 1/2 cup dried cranberry beans
- 1 ⁄3 cup dried chickpeas
- 7 tablespoons extra-virgin olive oil
- 1 medium yellow or white onion, chopped (about 1 cup)
- 2 medium carrots, peeled and chopped (about 2⁄3 cup)
- 2 medium celery stalks, chopped (about 1/2 cup)
- 2 teaspoons minced garlic
- 1 (28-ounce) can crushed tomatoes (about 3 1/2 cups)
- 3 medium yellow potatoes, peeled and diced (about 1 1/2 cups)
- 1 1/2 cups chopped fennel
- 1/4 cup loosely packed fresh Italian flat-leaf parsley leaves, chopped
- 2 tablespoons chopped fresh basil leaves
- 2 ⁄3 cup of Sardinian fregula, Israeli couscous, or acini di pepe pasta
- 1/2 teaspoon salt
- 1/2 teaspoon freshly ground black pepper
- 1/4 cup finely grated pecorino Romano (about 2 ounces)
Pork and Squash Stew with Chiles

Combine pork, coriander, half of garlic, and 1 Tbsp
- 3 pounds boneless pork shoulder (Boston butt), cut into 2” pieces
- 1 tablespoon ground coriander
- 10 cloves garlic finely chopped, divided
- 1 tablespoon kosher salt, plus more
- Freshly ground black pepper
- 1/2 cup raw shelled pumpkin seeds
- 6 dried New Mexico or guajillo chiles
- 2 chiles de árbol or 1/2 tsp. crushed red pepper flakes
- 2 large yellow onions, cut into 1/8”-thick wedges, divided
- 2 tablespoons vegetable oil
- 4 sprigs oregano
- 1/2 kabocha squash (about 1 lb.), peeled, seeds removed, cut into 1” pieces
- 1 delicata squash, seeds removed, cut into 1/2”-thick slices
- 1/2 small red onion, thinly sliced
- 1/4 cup fresh lime juice
- Cilantro sprigs (for serving)
Apricot Vinegar, Fig, Sweet Pepper, and Romaine Salad

- 1/4 c apricot vinegar
- 2 T fig vinegar
- 1/4 c olive oil
- 3 small sweet peppers, one red, one yellow, and one orange
- 1 head romaine lettuce
- 2 dried figs
- 4 black olives cured in olive oil & sliced
- 1 or 2 green onions, sliced

Spice Roasted Cauliflower Salad

1. Heat the oven to 220. Put all the spices in a small bowl and stir well
- Spice mix:
- 1 tsp cumin seeds (or ground cumin)
- 1 tsp coriander seeds
- a good pinch or two of cayenne pepper (less if you are frightened of hot stuff)
- 1/2 tsp turmeric
- 1/2 tsp ground ginger
- 1/2 tsp garam masala
- 1/2 tsp salt
- 1 cauliflower
- 1 tin chickpeas, drained and rinsed (optional)
- 3-4 Tbsp olive oil
- 3 handfuls of baby spinach, washed, dried and shredded
- 1/2 cup plain, natural yogurt mixed with juice of a lemon, 1/2 tsp Dijon mustard and a tablespoon of good extra virgin olive oil, plus salt and pepper
