1. Adjust oven rack to lower-middle position and preheat oven to 325°F
- For the Potatoes:
- 3 tablespoons extra-virgin olive oil, divided
- 2 1/2 pounds bone-in, country-style pork ribs

- 3 sprigs fresh thyme
- 1/2 teaspoon crushed red pepper flakes
- 2 pounds Yukon Gold potatoes, peeled and chopped
- 1 stick unsalted butter, melted
- 3/4 cup heavy cream
- 1/2 cup milk

Instructions Mix all ingredients and let stand at room temperature for 2 hours
- 20-24 oz fresh tomatoes (4-5 roma tomatoes or 3-4 regular tomatoes) diced small
- 1 clove garlic minced
