- DRESSING:
- 2 cups uncooked small pasta shells
- 3/4 cup chopped green pepper
- 3/4 cup chopped fresh tomatoes
- 1/2 cup chopped pepperoni
- 1/2 cup cubed hard salami
- 1/2 cup whole ripe olives, quartered
- 2 ounces provolone cheese, cubed
- 1/3 cup chopped onion
- 1/3 cup canola oil
- 1/4 cup red wine vinegar
- 2 tablespoons sugar
- 1-1/2 teaspoons salt
- 1-1/2 teaspoons dried oregano

One Pot Wonder Cajun Chicken Alfredo

Instructions Add the oil to a large pot (or large high sided skillet)
- 2 tbsp. olive oil
- 1 lb. boneless skinless chicken breast, cut into bite size chunks
- 2 tsp. Cajun seasoning (I used Weber N’Orleans Cajun)
- 6 garlic cloves, minced
- 1 1/2 cups chicken broth
- 1 cup milk (I used 2%)
- 8 oz. dried fettuccini pasta (half of a 1 pound box)

- 1 cup shredded colby jack or cheddar cheese

- 8 poblano peppers
- 1 pound chorizo sausage
- 1 cup frozen sweet corn
- 1 (15 ounce) can black beans, drained and rinsed
- 2 cups grated oaxaca cheese (or Monterey Jack cheese)
- 2 (15 ounce) cans diced tomatoes
- 1 (4 ounce) can diced green chiles (or homemade diced green chiles)
- 1 teaspoon chili powder
