Instructions Lightly spray grill with cooking spray
- 2 lbs. boneless, skinless chicken breasts cut into 1” cubes
- 1 small sweet onion cut into 2” pieces
- 1 yellow, green, and red bell pepper cut into 2” pieces
- Louisiana Lemon Pepper Seasoning, to taste
- Wooden skewers soaked in water for 30 minutes

- 1 1/2 cups uncooked white rice
- 3 cups water
- 4 tablespoons vegetable oil
- 1 cup fresh bean sprouts
- 1/2 cup chopped onion
- 1 1/2 cups cooked medium shrimp, peeled and deveined without tail
- 1/4 cup chopped green onion
- 2 eggs, beaten
- 1 teaspoon salt
- 1/4 teaspoon ground black pepper
- 4 tablespoons soy sauce
- 1/4 teaspoon sesame oil

In a small skillet, combine the scallops, wine, butter and onion
- TOPPING:
- 6 ounces bay scallops
- 3 tablespoons white wine or chicken broth
- 2 teaspoons butter
- 1/4 teaspoon dried minced onion
- 1-1/2 teaspoons all-purpose flour
- 1/4 cup heavy whipping cream
- 3 tablespoons shredded cheddar cheese
- 4 teaspoons dry bread crumbs
- 1 teaspoon butter, melted

In a small saucepan, saute the garlic and pepper flakes in oil for 1-2 minutes or until garlic is tender
- ROLLS:
- 2 garlic cloves, minced
- 1/2 teaspoon crushed red pepper flakes

- 2 tablespoons tomato paste
- 4 ounces uncooked thin rice noodles

- 1 medium cucumber, seeded and julienned
- 1 medium carrot, julienned
- 12 rice papers (8 inches) or spring roll wrappers

KC Classic Barbecue Sauce

"Kansas City barbecue goes shamelessly for the sweet tooth
- 2 tablespoons chili powder
- 1 teaspoon ground black pepper
- 1 teaspoon table salt
- 2 cups ketchup
- 1/2 cup yellow ballpark-style mustard
- 1/2 cup cider vinegar
- 1/3 cup Worcestershire sauce
- 1/4 cup lemon juice
- 1/4 cup steak sauce
- 1/4 cup dark molasses
- 1/4 cup honey
- 1 teaspoon hot sauce
- 1 cup dark brown sugar (you can use light brown sugar if that's all you have)
- 3 tablespoons vegetable oil
- 1 medium onion, finely chopped
- 4 medium cloves of garlic, crushed or minced
- Optional. If you are cooking indoors, or if your meat does not have a lot of smoke flavor, or if you just want more smoke flavor, you can add 1 teaspoon of liquid smoke.

- 1 tablespoon unsalted butter
- 1/3 cup all-purpose flour
- 1/4 teaspoon salt
- 4 skinless, boneless chicken breast halves
- 2 lemons, juiced
- 1 cup chicken broth
- 2 tablespoons Worcestershire sauce
- 1/4 cup vermouth
- 1/2 teaspoon minced garlic
- 1 bay leaf
- 1 teaspoon dried basil
- 1 (14 ounce) can artichoke hearts, drained and chopped
- 1 tablespoon cornstarch
- 1/4 cup water

Directions Remove any fat and gristle from the roast and cut into strips 1/2 inch thick by 2 inches long
- 2 pounds beef chuck roast
- 1/2 teaspoon salt
- 1/2 teaspoon ground black pepper
- 4 ounces butter
- 4 green onions, sliced (white parts only)
- 4 tablespoons all-purpose flour
- 1 (10.5 ounce) can condensed beef broth
- 1 teaspoon prepared mustard
- 1 (6 ounce) can sliced mushrooms, drained

- 1/3 cup white wine
