- 1/3 cup balsamic vinegar
- 1/2 cup chicken broth
- 2 teaspoons minced lemon zest, or to taste

Pork Chops Italiano

Directions Heat 1 teaspoon olive oil in a skillet over medium heat

- 2 cups sliced mushrooms
- 2 tablespoons olive oil
- 6 (3/4 inch thick) pork loin chops
- 2 cloves garlic, crushed
- 1 cup chopped onion
- 1 (14.5 ounce) can diced Italian tomatoes, undrained
- 1 teaspoon dried basil
- 1/2 teaspoon dried oregano
- 1/2 teaspoon salt
- 1/4 teaspoon ground black pepper
- 1/2 cup water, if necessary
- 1 large green bell pepper, cut in 6 pieces
Italian Sausage & White Bean Penne

Preparation Bring a large pot of water to a boil
- 8 ounces penne (about 2 cups)
- 2 teaspoons plus 1 tbsp. olive oil
- 1 package (12 oz.) fully cooked Italian chicken sausage, cut into 1/2-inch-thick half moons
- 5 cloves garlic, finely chopped
- 1 bag (8 oz.) assorted-color mini sweet peppers, thinly sliced
- 1/4 teaspoon crushed red pepper
- 1 cup low-sodium chicken stock
- 1 can (14 to 15.5 oz.) cannellini beans, rinsed
- 7 ounces baby spinach (about 7 cups)
- 2 ounces Asiago cheese, shredded (about 3/4 cup)
Toasted Ravioli

Bring ravioli and eggs to room temperature
- 1/2 c Panko bread crumbs
- 1/2 c Italian seasoned bread crumbs
- 1 tsp Italian seasoning
- 1/2 tsp kosher salt
- 10-14 store bought fresh ravioli – not frozen (I used jumbo four-cheese)
- 2 eggs
- 1/3 c milk
- oil for frying
- marinara sauce for dipping (optional)

Heat oven to 350°F for shiny metal or glass pan (or 325°F for dark or nonstick pan)
- 1 1/2 cups coarsely crushed pretzels
- 1/2 cup sugar
- 1/2 cup butter or margarine, melted
- 1 box white cake mix
- 1 1/4 cups bottled nonalcoholic margarita mix
- 1 ⁄3 cup vegetable oil
- 1 tablespoon grated lime peel
- 3 egg whites
- 1 container (8 oz) frozen whipped topping, thawed
- Grated lime peel or wedges, if desired
Stuffed Chicken Parmesan

- 3 chicken breasts, boneless and skinless
- Salt, to taste
- 1 cup mozzarella
- 2 cups flour
- 6 eggs, beaten
- 2 cups bread crumbs
- 1 cup oil, for frying
- 3 cups tomato sauce
- 1/2 cup parmesan
- 2 tablespoons basil

Fry ham until brown. Melt butter in ham drippings, add onions and cook until they are transparent
- Shrimp and grits
- 1 pound of peeled and deveined, medium
- Shrimp
- 1 onion, chopped.
- 1/2 stick of butter
- Salt and pepper to taste
- Four servings of grits, cooked in milk, instead of water. Add more milk after cooking, to make grits pourable
- 4 slices of country ham

- 3/4 cup fine dry bread crumbs
- 1/2 cup Harris Teeter butter

- 1/8 tsp Harris Teeter pepper
- 1/8 tsp paprika
- 3 Tbsp fresh lemon juice
