Lemon Butter Chicken

- Lemon Butter Sauce:
- 1/4 cup white wine
- 5 tablespoons fresh lemon juice
- 5 tablespoons heavy cream
- 1 cup butter, chilled
- salt and pepper to taste
- Chicken
- 4 skinless, boneless chicken breast halves - pounded to 1/4 inch thickness
- 1 tablespoon olive oil
- 1 tablespoon butter
- 1/4 cup all-purpose flour
- salt and pepper to taste
- 4 ounces bacon
- 6 ounces mushrooms, sliced
- 6 ounces artichoke hearts, drained and halved
- 2 teaspoons capers, drained
- 1 Lemon, sliced
- chopped fresh parsley for garnish
BURGER OF THE MONTH: Two-Cheese Bacon Burger with Creamy Caramelized Onion Sauce

With this burger, more is more
- 1 tbsp. olive oil, plus more for drizzling
- 3 tbsp. butter, at room temperature
- 2 large or 3 medium onions, quartered and thinly sliced
- Salt and finely ground black pepper
- 1/2 cup beef consommé or beef stock
- 1 cup sour cream
- 8 slices meaty bacon
- 1 1/2 –2 lbs. 80% lean ground beef
- Kosher salt and coarsely ground black pepper
- 2 tbsp. Worcestershire sauce
- 4 slices Swiss cheese
- 4 slices white American cheese
- 4 brioche or potato burger rolls, split
- 2 tbsp. Dijon mustard
- Pickle relish or sliced sandwich-size pickles
- Leaf lettuce or little gem leaves

- 1 package (10oz) mushrooms, sliced
- 1 medium onion, chopped
- 1 clove garlic, finely chopped
- 1/2 tsp. salt
- 1/4 tsp. ground black pepper
- 1/3 cup Mayonnaise
- 4 burrito size flour tortillas
- 1 1/2 cups shredded Monterey Jack Cheese
- 2 jalapeno peppers, seeded, chopped
Pineapple Bourban Sauce

DIRECTIONS Pour all ingredients into a medium sized sauce pan, and bring to a boil
- 1 cup all-natural ketchup
- 1 1/2 cups brown sugar
- 3/4 cups pure pineapple juice (not from concentrate)
- 1/2 cup crushed pineapple
- 1/2 cup bourbon (I used Jim Beam)*
- 1/3 cup molasses
- 1/2 teaspoon ground black pepper
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1/2 Teaspoon** chipotle chili pepper ( I used McCormicks brand )

- 3 oz. cream cheese, softened
- 1/4 cup mayonnaise
- 3/4 cup cooked crabmeat, chopped
- 2 green onions, chopped
- 1/8- 1/4 teaspoon cayenne pepper

Directions Preheat oven to 400 degrees F (200 degrees C)
- 1 pound crabmeat
- 1/2 cup mayonnaise
- 1 tablespoon fresh lemon juice
- 1 teaspoon Worcestershire sauce
- 1/2 teaspoon Old Bay Seasoning TM
- 1/2 teaspoon salt
- 1/2 teaspoon cayenne pepper
- 1/2 teaspoon dry mustard
- 1 egg, beaten
- 1/4 cup fresh bread crumbs
- 1 teaspoon paprika
- 3 tablespoons butter

- 1/3 cup whipping cream

Whisk together the milk, 3 tbsp of creamy peanut butter, and egg
- Ingredients
- 1.5 lbs boneless chicken cutlets
- 3/4 cup milk
- 3 Tbsp. creamy peanut butter (or maybe a little more)
- 1 egg
- Salt and pepper
- Approximately 2-3 cups crushed Corn Flakes
- Vegetable/Canola Oil
- For Sauce
- 1/2 cup creamy peanut butter (or maybe a little more)
- 3 Tbsp. soy sauce
- 3 Tbsp. brown sugar
- 3/4 cup water (can reduce or adjust to get the thickness desired)
- Drizzle of honey
