- 12 oz (375 g) flank steak
- 1 tsp (5 mL) sugar
- 2 tsp (10 mL) cornstarch
- 1 tbsp (15 mL) soy sauce
- 1 tsp (5 mL) sesame oil
- 1 tbsp (15 mL) water
- SEASONING SAUCE
- 1 . cups (375 mL) chicken stock
- 1 tsp (5 mL) sugar
- 2 tbsp (30 mL) soy sauce
- 2 tbsp (30 mL) cornstarch
- 1 tsp (5 mL) sesame oil
- 1/4 cup (60 mL) vegetable oil (for frying)
- NOODLES
- 1 small dried chili, chopped
- 1 tbsp (15 mL) finely chopped ginger
- 1 tbsp (15 mL) finely chopped garlic
- 3 tbsp (45 mL) salted black beans, rinsed and mashed
- 1 cup (250 mL) snow peas, strings removed
- 1 red pepper, thinly sliced
- 1 onion, thinly sliced
- 8 oz (250 g) rice noodles, rinsed

In a large (at least 5-quart/5-l) bowl, cover the chicken with 3 quarts (3 l) cold water
- 1 whole chicken, cut into 10 pieces
- 3 Tbs. kosher salt, plus more, to taste
- 3 cups (15 oz./470 g) all-purpose flour
- 2 Tbs. garlic powder
- 2 Tbs. onion powder
- 2 Tbs. paprika
- 2 tsp. cayenne pepper

An easy dish to prepare, this chicken piccata still makes a presentation elegant enough for company
- 2 large lemons
- 5 boneless, skinless, chicken breasts, trimmed and pounded until 1/4 inch thick
- 1 pinch salt
- 1 pinch black pepper
- 1/2 cup flour
- 4 tablespoons olive oil
- 1 small shallot, minced (about 2 tablespoons)
- 1 cup low-sodium chicken broth
- 2 tablespoons capers, drained
- 3 tablespoons unsalted butter, softened
- 2 tablespoons fresh parsley, minced
- Couscous or angel hair pasta, for serving
