Oatmeal Applesauce Muffins

- 1 cup old fashioned rolled oats (not instant)
- 1 cup nonfat milk
- 1 cup whole wheat flour
- 1/2 cup brown sugar
- 1/2 cup unsweetened applesauce
- 2 egg whites (I’ve used EggBeaters)
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp salt
- 1 tsp cinnamon
- 1 tsp sugar
- raisins or nuts (optional but I haven’t used either yet)
Perfect Pizza Dough

Stir 2 tbsp flour, 1/2 cup warm water and yeast in large bowl
- 2 cups flour {optional whole wheat flour}
- 8 gram package of quick rising instant yeast
- 1 tbsp olive oil
- 3/4 tsp salt
- Variation - Green Onion Cakes
- Instead of olive oil, add dark sesame oil and 1/2 cup of finely chopped green onions or leeks.
Sweet and Sour Chile Sauce

- 1 tsp sambal oebek chili sauce
- 1/2 tsp minced shallot
- 1/2 tsp minced garlic
Crottin Salad with Pears, Fennel and Currants

Cut the stems and feathery leaves from each fennel bulb
- 2 fennel bulbs
- 1 Tbs. sherry vinegar
- 3 Tbs. extra-virgin olive oil
- 1 aged Crottin de Chavignol or other small, round aged goat cheese, about 2 oz. (60 g), coarsely grated
- 1/2 tsp. sea salt or kosher salt
- 1/4 tsp. freshly ground white pepper
- 1 1/2 cups (1 1/2 oz./45 g) mâche or baby arugula
- 3 pears, halved, cored and thinly sliced
- 1/3 cup (2 oz./60 g) dried currants
