Hummingbird Cake

Combine the flour, sugar, baking soda, salt, cinnamon
- 3 cups all-purpose flour
- 2 cups white sugar
- 1 teaspoon baking soda
- 1 teaspoon salt
- 1 teaspoon ground cinnamon
- 3 eggs- lightly beaten
- 2 teaspoons vanilla extract
- 1 1/2 cups oil
- 1 (8 ounce can) crushed pineapple -do not drain
- 2 cups bananas, mashed or about 3 – 4 large bananas
- 1 cups pecans or almonds/ walnuts (it is supposed to be pecans but sometimes I change it up a bit)

Prep Night: You can prep these wontons several nights ahead of your gathering, they freeze nicely
- Filling:
- 1 Log of Chevre Goat Cheese (10oz.) @ room temperature
- 1 Large yellow onion, sliced very thin, then quartered
- 2 tbsp of Olive Oil
- 2 tbsp of unsalted butter
- 1/4 tsp coarse gray salt
- 1/4 tsp of fresh ground pepper
- 25 Wonton wrappers

- 1 Jar Dalmatia Dried Fig Spread – with Orange (brand I prefer)
- 2 tsp balsamic vinegar (I use an 18 year aged)

From Williams and Sonoma cook book With Orange Maple Syrup
- Make Syrup : combine 1 orange cut into 8 wedges, cup of water, 1 tsp honey in a saucepan and bring to a boil. Simmer until reduced to 1/2 cup. Add maple syrup and stir over low heat until combined and warm. Set aside.
- 1 1/2 cups flour
- 1 tsp b powder
- 1 tsp b soda
- 1/2 tsp salt
- 2 tbsp sugar
- 3 large eggs separated
