Roxanne’s Famous Taco Salad

So easy you can’t mess it up
- 1 . 3 bags shredded lettuce( for some reason it’s better when it’s shredded)
- 2 . 1 package of any kind of meatless ground meat
- 3 . 1 package taco seasoning
- 4 . 1 bag of shredded cheese (I use Mexican blend or fiesta blend)
- 5 . 1 lg. tomato (chopped)
- 6 . 1 sm or med red onion (chopped)
- 7 . 1 can dark red kidney beans (drained, rinsed and pat dry)
- 8 . 1 bag Doritos ( I use spicy nacho cheese, open package slightly to let out air and crunch the whole thing up to small pieces)
- 9 . 1 bottle of spicy ranch dressing by Hidden Valley (sometimes its hard to find, I get it at either Wallmart..or at Stater Bros)
Butter Syrup

In a saucepan combine butter and maple syrup until it just comes to a boil
- 1 c. maple syrup
- 1/2 c butter

- 2 chickens (3 pounds each), cut in eight serving pieces
- 1 quart buttermilk
- 2 cups all-purpose flour
- 1 tablespoon kosher salt
- 1 tablespoon freshly ground black pepper

- 1/2 cup halved cherry tomatoes
- 1/2 cup fresh or frozen, defrosted, corn kernels
- 1/2 cup fresh or frozen, defrosted, green peas
- 1/4 cup pitted black olives, sliced
- 1/4 cup grated parmesan cheese
- 1/4 cup extra virgin olive oil
- 2 tablespoons freshly squeezed lemon juice
