- 2 medium eggplants (sliced 1/4-inch thick rounds)

- 2 cups Mario's Basic Tomato Sauce
- 1 cup fresh ricotta cheese

- 2 1/2 cups basil leaves (chopped)
- 2 cloves garlic
- 2 tablespoons pine nuts (raw)
- 1/4 cup Parmigiano-Reggiano (freshly grated)
- 1/4 cup extra-virgin olive oil
- Kosher salt and freshly ground black pepper (to taste)

- 2 lbs ground beef
- 1 large onion chopped
- 3 cloves garlic minced
- 1 14 oz can beef broth
- 1 8 oz can tomato sauce
- 1 large can whole tomatoes
- 1 large can chili beans
- 1 can red kidney beans
- 1 can pinto beans
- 1/2 t. sugar
- chili powder, to taste
- cumin, to taste
- I always add a package of store bought chili mix.
