Lime Cream Trifle

Directions Blend the condensed milk, evaporated milk and lime juice in a blender until smooth

- 1 (14-ounce) can sweetened condensed milk
- 1 (12-ounce) can evaporated milk
- 3 limes, juiced
- 1 lime, zested
- 1 (5.5-ounce) package Maria crackers, or 1 (4.8-ounce) package graham crackers
- 1 lime, for garnish, optional

El Torito Cilantro and Pepita Salad Dressing

I love this dressing at El Torito
- 2 medium anaheim chilies, roasted, peeled and seeded
- 1/3 cup pumpkin seeds, roasted
- 2 garlic cloves, peeled
- 1/4 teaspoon ground black pepper
- 1 teaspoon salt
- 12 ounces salad oil
- 1/4 cup red wine vinegar
- 5 tablespoons grated Cotija cheese (you can also use Parmesan cheese if you cannot find Cotija)
- 2 bunches fresh cilantro, stemmed
- 1 1/2 cups mayonnaise or greek yogurt for a lighter version. You could also do 1/2 mayo and 1/2 yogurt
- 1/4 cup water

Boil enough water to fill a large coffee mug (12oz) in which you will steep the tea bags until water has cooled
- 4 Oolong tea bags
- 1/2 Cup Unsweetened Almond Milk
- 1-2 t. vanilla
- 1/2 t. cinnamon
- pinch of cayenne
- 2 pinches of sea salt
- sweeten to taste with truvia or stevia

- 1 cup vegetable oil
- 1/2 cup rice vinegar
- 1/4 cup soy sauce
- 1 tbsp. sugar
- 1 1/2 tsp. finely grated ginger
- 2 medium carrots (about 8 oz.), peeled and roughly chopped
- 1/2 medium yellow onion (about 6 oz.), roughly chopped
- Kosher salt and freshly ground black pepper, to taste
- 1 head (about 1 lb.) iceberg lettuce, trimmed and cut into bite-sized pieces, for serving

Directions Slice the onions and cook in 1/4 stick butter until soft and light brown
- 1 whole large (or 2 small) onions
- 2 sticks butter (lots and lots of butter)
- 2 to 3 pounds cube steak (tenderized round steak that's been extra tenderized)
- Seasoned salt, such as Lawry's seasoned salt (or similar seasoned salt)
- 1/2 cups (approximately) Worcestershire sauce
- Hot sauce, such as Tabasco
- 4 whole French/deli rolls (Earthgrains are best!)
