Three-Cheese Tortellini in Parmesan Broth

To make the broth, bring the stock to a rapid boil in a 4-quart pot or larger
- For the broth:
- 1 pound prepared tortellini
- 8 cups chicken or vegetable stock, preferably homemade
- 2 Parmesan cheese rinds (1"x3"x1/4" each or equivalent size and thickness)
- 4 garlic cloves, smashed
- 1 bay leaf
- 1/4 cup chopped parsley, to garnish

- 1 lb ground beef
- 1 (15 ounce) can tomatoes
- 1/4 cup chopped onion
- 1/4 cup chopped bell pepper
- 1/4 cup chopped celery
- 1 (8 ounce) can mushrooms
- 2 tablespoons brown sugar or 2 tablespoons sweet pickle juice
- 2 tablespoons Worcestershire sauce
- 1 (10 3/4 ounce) can cream of mushroom soup
- 1/4 lb sharp cheddar cheese
- 1 (6 ounce) package angel hair pasta, cooked, this is an estimated size bag- the original recipe called for 1 small bag
- 1 (8 ounce) can tomato sauce
- salt and pepper

- 4 large chicken breasts
- 2 sleeves Ritz crackers
- 1/4 t salt
- 1/8 t pepper
- 1/2 C milk
- 3 C cheddar cheese, grated
- 1 t dried parsley
- 1 14 ounce can cream of chicken soup
- 2 T sour cream
- 2 T butter
