- 3/4 cup peanut butter
- 1/2 cup butter (unsalted)- softened and cut into small pieces
- 1/2 cup light corn syrup
- 1 teaspoon vanilla
- 1/2 teaspoon salt
- 4 cups confectioners’ sugar
- 3/4 cup peanuts, chopped (optional)

- 8 strips bacon
- 1 large cucumber, peeled and seeded

This yummy dish combines cheesy pasta blended with chicken, sun-dried tomatoes, and mushrooms
- 6 tablespoons butter, plus more for baking dishes
- Kosher salt, to taste
- Black Pepper, to taste
- 1 pound penne rigate
- 1 teaspoon olive oil
- 2 boneless skinless chicken breast halves, about 8 ounces each, halved horizontally
- 1/2 cup plus 2 tablespoons flour
- 6 garlic cloves, finely minced
- 6 cups whole milk
- 10 ounces white or cremini mushrooms, trimmed and thinly sliced
- 1 cup sliced oil-packed sun-dried tomatoes, drained
- 1 1/2 cups shredded provolone
- 1 1/2 cup Parmesan, freshly grated, about 6 ounces

Mac 'N Cheese w/ a slight kick if you want it
- 16 oz (1 pound box) elbow macaroni
- 8 Tablespoons unsalted butter -- cut into bits
- 25 – 30 Dashes Franks Hot sauce
- 2 cans evaporated milk -- (12 ounce ea)
- 2 pounds (4 cups) sharp cheddar cheese –shredded
- 4 large eggs -- beaten
- 2 teaspoon dry mustard -- dissolved in 2 tsp water
- 2 teaspoons Kosher Salt
- 2 teaspoons Morton’s Nature’s Seasonings
- 2 teaspoons Tony Chachere’s Original Creole Seasoning (BAM)
- 2 teaspoons Paula Deen’s House Seasoning** (PAULA)- see below for recipe...
- Fresh Ground Pepper to taste
- 1-cup fresh breadcrumbs (or Italian Panko) (to cover top)- optional)

- 4 teaspoons brown sugar
- 4 teaspoons garlic powder
- 3 to 4 teaspoons Chipolte chili powder, any type of chili powder will work in this recipe

- 12 whole fresh mushrooms
- 1 tablespoon vegetable oil
- 1 tablespoon minced garlic
- 1 (8 ounce) package cream cheese, softened
- 1/4 cup grated Parmesan cheese
- 1/4 teaspoon ground black pepper
- 1/4 teaspoon onion powder
- 1/4 teaspoon ground cayenne pepper
Tzatziki Cucumber Dip

What a great and delicious appetizer! Tangy and refreshing, this cucumber yogurt dip is called Tzatziki in Greek
- 2 cups 2% greek or plain yogurt
- 1 English hothouse cucumber, unpeeled, halved lengthwise, seeded, grated (reg cucumbers are ok if no English cucumbers are avail, but put in strainer to get liquid out, for about an hour)
- 1 tablespoon coarse kosher salt
- 1/2 cup sour cream
- 2 tablespoons fresh lemon juice
- 2 tablespoons minced fresh dill
- 1 - 2 garlic cloves, minced
- 6 pita breads, cut horizontally in half, then cut into wedges
- Olive oil
- Optional garnish... a little cayenne pepper for a little color and kick! Add a couple of mint leaves and diced cucumbers as well.
Tomatillo Salsa Verde

This authentic, Mexican salsa verde has a fabulous flavor
- 1 pound tomatillos, husked
- 1/2 cup white onion, finely chopped
- 5 cloves garlic, minced
- 1 – 2 Serrano chile peppers, minced (remove 1/2 seeds if want milder, caution don't rub eyes after handing peppers)
- 2 tablespoons cilantro, chopped
- 1 tablespoon fresh oregano, chopped (dried is ok)
- 1/2 teaspoon ground cumin
- 1 1/2 teaspoons salt, or to taste
- 4 limes, juiced

- 12 (1-quart) canning jars
- 1 (46-ounce) jar for the ends of the pickles, if you'd like
- 1 quart white vinegar
- 3 quarts water
- 1 cup Kosher salt
