This is sweet, spicy and savory all at the same time, but not overwhelming of any of those! Each of the flavor pro

  • 8 tablespoons unsalted butter, melted, plus 1 tablespoon at room temperature
  • 3 pounds butternut squash, peeled, halved, seeded, and diced into 1-inch cubes
  • o(Hint: Put in Microwave for 2-3 min at a time to make it easier to cut.Don't COOK it.. just get it soft enough to get knife into end so you can cut)
  • 3 sweet-tart apples that will keep their shape after baking, peeled, cored, and diced into 1/2-inch cubes
  • 1 1/3 cups dried cranberries
  • 1/4 cup finely chopped flat-leaf parsley
  • 1/2 teaspoon finely chopped fresh thyme
  • 1 tablespoon kosher salt
  • 1 teaspoon freshly ground black pepper
  • 1/4 teaspoon cayenne pepper
  • 1 heaping cup plain flour

Great for a Party! You don’t taste the beer

  • 1 (12 fluid ounce) can limeade concentrate
  • 1 1/2 cups (one can) gold or silver tequila
  • 3 (12 fluid ounce) cans Mexican beer (Dos Equis or Corona)
  • 1 whole lime, cut into 6 wedges
  • ICE
  • Optional: 1 can of 7-up or up to 1-can of water.. you may want to do this by the glass, instead of into the entire pitcher, and let your guests make theirs to taste.
  • Notes: I used just water rather than 7-up. I think it makes a dryer, more authentic margarita that doesn’t mask the tequila flavor. If you want sweeter with some carbonation, then go for the 7-up.

  • 1 can petite diced tomatoes (I like Basil and Garlic flavored)- Drain & rinse slightly
  • 4 Chopped scallions/ green onions
  • Chopped cilantro (handful or to taste... if you don't like- use parsley)
