Loaded Baked Potato Salad

This Loaded Baked Potato Salad is great cold or warm
- Fully Loaded Baked Potato Salad
- 8 medium Russet Potatoes or Yukon Potatoes
- 1 cup sour cream
- 1/2 cup mayonnaise
- 1 package of Hormel bacon, cooked and crumbled (or 8 slices cooked crispy)
- 1 small onion, chopped (optional)
- Chives, to taste
- 1 1/2 cups shredded cheddar cheese
- Salt and Pepper to taste

1. Heat oven to 375°F. Spray 30 mini muffin cups with Crisco® Original No-Stick Cooking Spray
- 1 box (9 oz) Green Giant® frozen chopped spinach, thawed, squeezed to drain
- 1 can (10 oz) diced tomatoes with green chiles, undrained
- 1 package (8 oz) cream cheese, softened
- 1 cup sour cream
- 1/2 teaspoon taco seasoning mix (from 1-oz package)
- 40 to 45 nacho cheese-flavored tortilla chips
- 2 cans (12 oz each) Pillsbury® Grands!® Jr. Golden Layers® refrigerated buttermilk biscuits (20 biscuits)
- 1 cup finely shredded Mexican cheese blend (4 oz)
Smoky-Spicy Beer-Cheese-Sausage Soup

Your traditional beer-cheese soup, kicked up with the addition of smoked Polish sausage, chipotles and jalapenos
- o 1 pound Smoked Sausage, Preferably Kielbasa
- o 1 whole Large Onion, Diced
- o 3 cloves Garlic, Minced
- o 3 stalks Celery, Diced
- o 1 whole Medium Jalapeno, Diced (ribs And Seeds Removed)
- o 2 whole Small Chipotle Peppers, Packed In Adobo (but Rinse The Sauce Off!)
- o 2 bottles (12 Oz. Bottle) Beer (porter And Bock Work Best - Mix And Match)
- o 2-1⁄2 cups Chicken Broth
- o 1-1⁄2 cup Heavy Cream Plus 3 Tablespoons, Divided
- o 1 Tablespoon Cornstarch
- o 1 block Sharp Cheddar Cheese (8 Oz. Block)
- o 8 Red Bliss Potatoes cubed (optional- if you want it to be slightly heartier)
- o Salt And Black Pepper To Taste

- 1/2 cup buttermilk
- 1/2 tsp. white pepper
- 2 Tbsp. grated Red Onions
- 4 dashes Frank's Hot Sauce
- 1 Tbsp. lemon juice
- 1 tsp. worchestire sauce
- 1/2 tsp. salt
- 1 dash ceyenne pepper
- 1 tsp. minced garlic
- 2 tsp. sugar
- 5 oz. container crumbled blue cheese

My mother used to make these all the time, when I was a child at the holidays! Always a great memory
- Remember... Make at least 4 – 5 days before you want to eat these. They need to sit and ferment for best results and taste.
- 1 Box Vanilla wafers
- 1 cup pecans
- 1 1/4 Cup Icing Sugar (or substitute 1 1/4 cup sugar + 1/4 tsp cornstarch – put in blender and blend on high speed for 60 seconds)
- 2 Tbsp brown sugar-
- couple dashes of cinnamon, couple dashes of nutmeg
- 1/2 Cup Spiced Rum (or whatever liquor you want)
- 2 Tbsp white corn syrup (Karo syrup)

- 1 can Black Beans, drained and rinsed
- 1 Can White Corn
- 2 Avocados, ripe but not too soft- peeled and diced
- 1/2 - 1 box Grape or Cherry Tomatoes, quartered
- Juice of one Lemon

Sweet Potato Casserole

This is a recipe you will definitely want to save for later
- 4 1/2 pounds sweet potatoes
- 1 cup sugar
- 1/4 cup milk
- 1/2 cup butter softened
- 2 large eggs
- 1 teaspoon vanilla extract
- 1/4 teaspoon salt
- 1 1/2 cups miniature marshmallows (optional for top)
- Topping: (double this for Extra goodness and tastiness)
- 1/2 cup packed brown sugar
- 1/2 cup pecan pieces
- 2 Tbsp flour

- 1 1/2 About 1 1/2 large heads garlic, separated into cloves (about 30)
- 5 1/2 tablespoons extra-virgin olive oil
- 1/4 teaspoon dried hot red pepper flakes
- 1 lb spaghetti or Penne (favorite pasta)
- 1 1/2 teaspoons finely grated fresh lemon zest
- 1/4 teaspoon salt
- 1/2 cup finely chopped fresh flat-leaf parsley (optional)
- Accompaniment: finely grated Parmigiano-Reggiano
Strawberry Margarita Jell-o Shots

We like to make fun and interesting Jell-O shots for our parties
- 24-30 Strawberries (about lg 2 containers- the larger the strawberry the better)
- 1 box Strawberry Jell-O
- 8 ounces tequila, preferably reposado or blanco
- 6 ounce Cointreau
- Sugar or Salt for garnish- personal choice
- 1-2 limes
- (For a kid friendly non-alcoholic version just use cold water or lemonade instead of tequila!)
