Tex Mex Salmon Burgers With Avocado Cream Spread

- FOR THE BURGERS:
- 1 pound Wild Salmon, Skin Peeled Off And Any Bones Removed, Cut Into Chunks
- 1/2 cups Purple Onion, Diced
- 1/4 cups Greeen Onion, Diced
- 1/2 cups Cilantro, Chopped
- 1/2 cups Whole Wheat Crackers, Crushed (I Like Kashi's Whole Wheat Pitas)
- 4 cloves Garlic, Minced
- 1/2 teaspoons Garlic Salt
- 1/2 teaspoons Black Pepper
- 1/4 teaspoons Tabasco Sauce
- 1 whole Lime, Cut In Half, 1 Half Reserved For Avocado Cream Spread
- FOR THE AVOCADO CREAM SPREAD
- 1 whole Avocado, Peeled, Pitted And Cut Into Large Pieces
- 1/4 cups Cilantro
- 1/4 cups Nonfat Greek Yogurt
- 1/8 teaspoons Tabasco Sauce
- 1/2 teaspoons Black Pepper
- 1/4 teaspoons Garlic Salt
- FOR THE ASSEMBLY:
- 4 whole Whole Wheat Buns
- 1 whole Recipe Roasted Corn Salsa

1) In a small saucepan, add the water and sugar and cook it together just long enough for the sugar to dissolve
- 1-3/4 cup of Water
- 1-3/4 cup of Sugar
- 2 cup of Fresh Lemon juice
- 4 Tbsp of Lemon Zest
Broccoli and Cauliflower Salad

Shock the onions in an ice water bath for 10 minutes to temper the sharp flavor, and pat dry
- 1/4 red onion, thinly sliced
- 2 slices bacon, cut in small pieces, cooked to crisp
- 1/2 bunch broccoli, cut into small florets (about 1 1/2 cups)
- 1/2 small head cauliflower, cut into small florets (about 1 1/2 cups)
- 2 tablespoons sugar
- 1 tablespoon red wine vinegar
- 1 teaspoon Dijon mustard
- 2 tablespoons vegetable oil
- 1/4 cup mayonnaise
- 1/2 teaspoon seafood seasoning, such as Old Bay
