Shrimp and Fish Po' Boys

For the shrimp and fish: Attach a deep-fry thermometer to the side of a heavy wide pot
- Shrimp and Fish:
- 3 cups vegetable oil, adjusted as needed
- 1 teaspoon garlic powder
- 1/2 teaspoon cayenne pepper
- 1/2 teaspoon dried thyme
- 1 teaspoon salt, plus more for sprinkling
- 1/2 teaspoon freshly ground black pepper
- 8 ounces medium shrimp, deveined, peeled
- Two 5-ounce tilapia fillets, cut lengthwise then crosswise into 2-inch pieces
- 1/4 cup whole milk
- 3/4 cup all-purpose flour
- 1/2 cup cornmeal
- Creamy Garlic Spread:
- 1/3 cup mayo
- 1 clove garlic, pressed
- Zest and juice of 1/2 lemon
- Po' Boys:
- 1 baguette, cut into quarters
- Shredded iceberg lettuce, for serving
- Sliced tomatoes, for serving
- Hot sauce, optional, for serving
Light Sweet Scones

- 1 pound 2 ounces light Italian or all-purpose flour
- 1 rounded teaspoon bicarbonate of soda (baking soda)
- 2 rounded teaspoon cream of tartar
- 1 teaspoon sea salt
- 1 stick plus 1 tablespoon unsalted cold butter, cubed*
- 1 ounce caster sugar (superfine)
- 1 egg, beaten
- 9 ounces buttermilk or milk, plus extra for the egg wash
- 2 ounces caster sugar (superfine), optional
- Special equipment: 2 1/2-inch biscuit cutter
- Cook's Note: if you are using salted butter, decrease the salt to 1/2 teaspoon

Quick-Marinated Cherry Tomato Salad

Halve the tomatoes and add them to a large zipper bag with the sliced red onion
- 1 pint red grape tomatoes
- 1 pint yellow grape tomatoes
- 1/2 red onion, thinly sliced
- 1/4 cup olive oil
- 3 tablespoons balsamic vinegar

- 1 cup warm water
- 1 teaspoon active dry yeast
- 1/4 cup of milk
- 1/2 tablespoon of melted butter
- 1 teaspoon salt
- 1 3/4 cups cold unsalted butter (3 1/2 sticks or 14 oz)
- Basic Egg Wash:
- 1 egg
- 1 tablespoon of milk
- You will also need to use the refrigerator and plenty of counter space. A non-stick mat, a ruler, and plenty of plastic wrap will be helpful as well.
