Classic Pasta Carbonara

A great carbonara is about balancing the cheese, eggs, pork, and pasta
- 1 lb. dried spaghetti, linguine, or bucatini (preferably imported from Italy)
- Kosher salt
- 1/2 lb. guanciale or pancetta, cut into 1/4-inch dice
- 2 Tbs. extra-virgin olive oil
- 3 large eggs, at room temperature
- 4 oz. finely grated Parmigiano-Reggiano (about 3-1/2 cups using a rasp grater)
- Freshly ground black pepper
Salmon Burgers with Tartar Sauce

Mix together mayo or vegan mayo with pickles, capers, dill, lemon juice, hot sauce, Worcestershire, salt and pepper
- 1 cup mayo or vegan mayo
- 3 tablespoons finely chopped gherkins or cornichons
- 2 tablespoons capers, chopped
- 3 tablespoons finely chopped fresh dill
- 1 tablespoon fresh lemon juice
- 1 teaspoon hot sauce
- 1 teaspoon Worcestershire sauce
- Salt and pepper
- 4 6-ounce salmon filets, skinless, chopped into 2-inch cubes
- 2 teaspoons Old Bay Seasoning, 2/3 palmful
- A handful of cracker crumbs or fine bread crumbs
- Olive oil
- Sliced lettuce, tomato and red onions
- 4 crusty burger rolls, split

- FOR THE CAKE:
- 2 cups Flour
- 2 cups Sugar
- 1/4 teaspoon Salt
- 4 Tablespoons (heaping) Cocoa
- 2 sticks Butter
- 1 cup Boiling Water
- 1/2 cup Buttermilk
- 2 whole Beaten Eggs
- 1 teaspoon Baking Soda
- 1 teaspoon Vanilla

- FOR FROSTING:
- 1/2 cup Finely Chopped Pecans
- 1-3/4 stick Butter
- 4 Tablespoons (heaping) Cocoa
- 6 Tablespoons Milk
- 1 teaspoon Vanilla
- 1 pound (minus 1/2 Cup) Powdered Sugar
Sweet Potato Hummus

Heat oven to 400°F. Poke holes in potatoes and bake for 45 minutes or until soft
- 3 medium sweet potatoes
- 1 tablespoon extra virgin olive oil
- 2 teaspoon water
- 1 cup cooked chickpeas
- 2 tablespoons tahini
- 1 tablespoon lemon juice
- 1/4 teaspoon lemon zest
- 1/4 teaspoon ground cumin
- 1/4 tablespoon ground coriander
- sea salt and pepper to taste
Al's Breakfast French Toast Batter

Whip all of the ingredients together in a medium shallow bowl
- 6 eggs
- 1/4 cup half-and-half
- 1/4 teaspoon salt
- 1/2 teaspoon sugar
- 1/4 teaspoon vanilla extract
- 1/4 teaspoon almond extract
- 6 thick slices good quality bead or brioche
- Powdered sugar, jam, syrup, or honey, for serving
Lazy Chiles Rellenos

- 2 cups whole milk
