Crock Pot Spaghetti and Meatballs

Spray the inside of your slow cooker (crock pot) with nonstick cooking spray
- Optional sauce ingredients:
- 1 lb. (16 oz.) box spaghetti
- 1 (24 oz) jar spaghetti sauce
- 4 cups water (vegetable or beef broth)
- 26 oz. (24 count) frozen meatballs
- olive oil
- 1 1/2 tsp. Italian seasoning
- 1 1/2 tsp. minced garlic
- 1 1/2 tsp. dried basil (or 2-3 leaves, fresh basil, torn)

Slow cooker method: Mix ingredients together well in a large bowl and transfer to slow cooker
- Two 15-ounce cans pumpkin or scant 4 cups fresh pumpkin puree
- 1 tsp cinnamon
- 1/2 tsp ground cloves
- 1/2 tsp ground ginger
- 1/2 tsp allspice
- 1/2 tsp nutmeg
- 1 cup honey (I used raw honey from our bees; see notes for alternative sweeteners–such as maple syrup–and their measurements for vegan options)

- 1 boneless pork shoulder roast
- 1 white onion, cut into thin strips

Gluten Free Angel Biscuits

Preheat your oven to 375°F
- 2 cups (280 g) all-purpose gluten free flour (I like Better Batter or my mock Better Batter here)*, plus more for sprinkling
- 1 teaspoon xanthan gum (omit if your blend already contains it)
- 7 tablespoons (42 g) nonfat dry milk (blended into a fine powder)
- 4 tablespoons (36 g) cornstarch
- 1 1/2 teaspoons baking powder
- 1/2 teaspoon baking soda
- 2 tablespoons (24 g) sugar
- 2 teaspoons (6 g) instant yeast
- 1 teaspoon kosher salt
- 6 tablespoons (84 g) unsalted butter, roughly chopped (about 1/2-inch dice will work) and chilled
- 1 cup (8 fluid ounces) buttermilk, chilled
- In place of the mock Better Batter + nonfat dry milk + cornstarch, you can use 2 1/2 cups (350 g) Cup4Cup gluten free flour, or my mock Cup4Cup blend.

Mango Coconut Fried Rice

Heat 1 tbsp of coconut oil in a large saute pan
- 2 cups coconut rice (this was made using jasmine rice and substituting coconut milk for half of the water)
- 2 cloves garlic, minced
- 1 tsp dried, chopped chives
- 1 cup mango, chopped
- 1 cup frozen peas
- 1 carrot, chopped
- 1 red pepper, chopped
- 1 chicken breast, cooked and chopped
- 2 large eggs
- 3 tbsp coconut oil (canola oil works as well)
- 1 tsp tamari wheat free soy sauce
- 2-3 tsp thai chili sauce (Thai Kitchen is gluten free - this is spicy, so adjust as you like for heat. We like things mild in our house)

- 1/2 cup (109g) packed light brown sugar
- 1/4 cup (50g) granulated sugar
- 4 tablespoons (56g) unsalted butter, melted and cooled
- 4 tablespoons (48g) vegetable shortening, melted and cooled
- 1 extra-large egg + 1 extra-large egg yolk at room temperature, beaten
- 2 teaspoons pure vanilla extract
- 1 cup (6 ounces) semi-sweet chocolate chips, tossed with 1/2 teaspoon cornstarch
