1. Cook Rice with mangoes
- Ingredients:
- Short sticky white rice (1 1/2 cups)
- Unsweetened Coconut Milk (one 13.5 oz. canned)
- Water (1 cup)
- Thai Mangos (2 pieces, cubed)
- Salt (1 teaspoon)
- Cilantro (1 cup, stems removed)
- For chicken:
- Chicken Breast (1 lb., no skin, cubed)
- Curry Powder (1 tablespoon)
- Paprika (1 teaspoon)
- Garlic (4 cloves, minced)
- Vegetable oil
Roasted Garlic Mushrooms

Preheat the oven to 200C/400F/gas mark 6
- 16 even-sized open cup mushrooms, stalks cut level
- 3 tbsp corn or vegetable oil
- 1/4 c unsalted butter, softened
- 3 cloves garlic, chopped very finely
- 2 tbsp fresh thyme, chopped
- 1 1/2 tbsp lemon juice
- salt and freshly ground black pepper to taste
- 1/4 c fresh breadcrumbs

Pour maple syrup and 1 1/2 cups water in a medium sauce pan
- 1 cup maple syrup
- 1 1/2 cups water
- 1 3/4 cups unsweetened cocoa powder
- 2 tablespoons vanilla extract

1. Preheat oven to 350F. Spray two 8-inch round cake pans with vegetable cooking spray
- 1 pkg yellow cake mix
- 2 large eggs
- 1 1/3 cups water
- Custard
- 1 large egg
- 1 egg white
- 1/2 cup sugar
- 1 1/2 tbsp cornstarch
- 1 1/4 milk
- 1 tsp vanilla
- Frosting
- 1 cup confectioner's sugar
- 3 tbsp unsweetened cocoa
- 2 tbsp hot water
Blender Black Bean Soup

Put 1 can of black beans in a blender with the chicken or vegetable stock, salsa and ground cumin
- Garnish:
- 2 – 15 ounce cans black beans – drained and rinsed
- 2 cups gluten free chicken or vegetable stock
- 1/2 cup prepared salsa
- 1 teaspoon ground cumin
- Salt & Pepper
- 1 lime – optional
- 1/2 cup sour cream
- Juice of 1/2 a lime (more or less)
- Sliced green onion tops (green part) or cilantro
