Qdoba Lime Cilantro Rice

- Bring water t booil; stir butter and rice into water
- 2 cups water
- 1 tablespoon butter
- 1 cup long-grain white rice
- 1 teaspoon lime zest
- 2 tablespoons fresh lime juice
- 1/2 cup chopped cilantro
Marinara Sauce

- 1/2 cup extra virgin olive oil
- 2 small onions
- 2 garlic cloves
- 2 celery stalks
- 2 carrots
- 1/2 tsp sea salt
- 1/2 tsp ground pepper
- 2 (32 ounce) cans crushed tomatoes
- 2 dried bay leaves
Marshmallow Fondant

1. Grease your mixing bowl and a Pyrex or glass bowl that can be used to melt marshmallows in the microwave
- 1 – 16 oz bag regular or miniature marshmallows
- 1 – 2 lb bag confectioner’s sugar
- 2 Tablespoons water
- 2 teaspoons flavoring
- Shortening
- cornstarch
- 2 Tbsp water
- 1 1/2 bags Marshmallows (10 oz)
- 1 lb + 1 cup confectioner's sugar

- 1/2 cup orange juice
- 1/2 cup water
- 2 tablespoons agave
- 1 teaspoon salt
- 1 medium-sized head of broccoli, florets only
- 1 cup of potato starch
- 2 cups canola oil, for frying
- 2 tablespoons canola oil
- 2 tablespoons ginger, diced
- 2 tablespoons garlic, diced
- 2 tablespoons toasted sesame seeds
- Rice, for serving

- For the Apple Dumpling:
- 3 small sweet apples, peeled and cored
- 1/2 cup coconut oil
- 1/2 cup milk of choice (I used THIS coconut milk)

- 2 tablespoons pure raw honey or pure maple syrup
