Crock Pot Hash Brown Casserole (Jess' Shower)

In a large bowl add the hash browns thawed or frozen, sour cream, soup, onion, shredded cheese and melted butter
- 1 - 26 - 32 ounce bag frozen hash browns
- 1 - 8 oz container sour cream
- 1 - 10.5 oz can cream of chicken soup
- 1/4 - cup onion, chopped fine
- 1 1/2 - cups shredded cheddar cheese
- 1/2 - cup butter, melted
- salt and pepper, to taste (about 1/4 teaspoon each)
Peanut Butter & Jelly Cupcakes

Preheat oven to 350 degrees
- 1 3/4 cups all-purpose flour
- 3/4 tablespoon baking powder
- 1/2 teaspoon salt
- 1/4 teaspoon baking soda
- 6 ounces (1 1/2 sticks) unsalted butter, softened
- 1 1/3 cups sugar
- 2/3 cup natural, creamy peanut butter
- 3 large eggs
- 1/2 cup sour cream
- 1/2 teaspoon pure vanilla extract
- Peanut Butter Frosting
- Strawberry jam, for topping
Apricot Almond Pop Tarts Gluten Free

Place gluten free flour mix, rice flour, oat flour, gelatin and sea salt in a food processor
- For the crust:
- Makes about twelve – 4″ x 2 1/2″ tarts
- 1 1/2 cups gluten free flour mix (I used Bob’s Red Mill )
- 1 cup brown rice flour
- 1/2 cup oat flour (make sure it’s gluten free)
- 1 teaspoon unflavored gelatin (I prefer Bernard Jensen gelatin )
- 1 1/2 teaspoons sea salt
- 1 cup (16 tablespoons) unsalted butter, cold, cut into tablespoons
- For the Filling:
- 3/4 cup apricot preserves
- 1/2 teaspoon almond extract
- 1 egg beaten with 1 tablespoon of water (if you are egg-free, you can use water to bind the dough)
Glazed Lemon Zucchini Bread

Mix flour, salt and baking powder in a medium bowl and set aside
- 2 cups cake flour
- 1/2 tsp. salt
- 2 tsp. baking powder
- 2 eggs
- 1/2 cup canola oil
- 1 1/3 cups sugar
- 2 TB lemon juice
- 1/2 cup buttermilk
- zest of 1 lemon
- 1 cup grated zucchini
- 1 cup powdered sugar
- 2 TB lemon juice
- 1 TB milk
Gluten-Free Wraps or Flatbread Recipe

1) If using parsley and onion flakes, add to Breads from Anna flour blend
- 1 1 1 package of Breads from Anna® Gluten and Yeast Free Bread Mix or Corn and Dairy Free Bread Mix
- 3 3 3 whole eggs
- 1 3/4 1 3/4 3/4 cups water, milk or non-dairy drink
- 1/3 1/3 1/3 cup oil (light olive oil, coconut, butter or any other oil you like using)
- 1 1 tablespoon 1 heaping tablespoon dried parsley (optional)
- 2 2 tablespoons 2 heaping tablespoons dried onion flakes (optional)
One Bowl Gluten Free Chocolate Cake

Preheat your oven to 350°F
- CAKE
- 1 1/2 cups (210 g) all-purpose gluten free flour (I used my Better Than Cup4Cup blend, but any of the others should work fine)
- 3/4 teaspoon xanthan gum (omit if your blend already contains it)
- 14 tablespoons (70 g) unsweetened cocoa powder (I prefer Dutch-processed in this recipe, but made it with natural cocoa powder and it worked fine)
- 1/2 teaspoon kosher salt
- 1/2 teaspoon baking soda
- 1 cup (200 g) sugar
- 3/4 cup (168 g) sour cream, at room temperature
- 1/2 cup (112 g) vegetable oil
- 2 eggs (120 g, out of shell) at room temperature, beaten
- 3/4 cup (6 ounces) warm water (about 95°F)
- GANACHE TOPPING (optional)
- 3/4 cup (6 fluid ounces) heavy whipping cream
- 8 ounces dark chocolate, chopped

In a large pitcher, combine all ingredients
- 8 cups of brewed green tea
- 1 tangerine, sliced
- A handful of mint leaves
- agave syrup (optional)

1 Heat the oil in a 3-quart saucepan on medium high heat
- 3 Tbsp coconut, peanut, or canola oil (high smoke point oil)
- 1/3 cup of high quality popcorn kernels
- 1 3-quart covered saucepan
- 1 Tbsp or more (to taste) of butter (optional)
- Salt to taste
Cream of Tomato Soup

**Use LARGE pot! 1. Melt the butter in a saucepan
- 4 Tbsp Butter
- 4 Tbsp Flour
- 2 cups milk
- 32 oz chicken broth
- 4 15oz cans tomato sauce
- 1 tsp basil
Homemade Fajita Seasoning

Combine all of the ingredients in an air tight container and mix thoroughly
- 4 tsp chili powder
- 2 tsp paprika
- 2 tsp salt
- 1 tsp cumin
- 1 tsp garlic powder
- 1 tsp onion powder
- 1/2 tsp dried oregano
- 1/4 tsp cayenne
