Preheat the oven to 375 degrees F
- Emeril's ESSENCE Creole Seasoning (also referred to as Bayou Blast):
- 2 cups orange juice
- 1 cup pineapple juice
- 2 tablespoons orange zest
- 2 tablespoons minced garlic
- 2 tablespoons minced ginger
- 2 tablespoons minced green onion
- 1 tablespoon sesame oil
- 1/2 cup soy sauce
- 1/2 cup mirin (sweet rice wine)
- 1 cup sugar
- 1 1/2 teaspoons crushed red pepper flakes
- 12 chicken drumsticks
- 2 tablespoons Essence, recipe follows
- 2 teaspoons salt
- 2 tablespoons chopped cilantro leaves
- 1 tablespoon toasted sesame seeds
- 2 1/2 tablespoons paprika
- 2 tablespoons salt
- 2 tablespoons garlic powder
- 1 tablespoon black pepper
- 1 tablespoon onion powder
- 1 tablespoon cayenne pepper
- 1 tablespoon dried oregano
- 1 tablespoon dried thyme
- Combine all ingredients thoroughly.
- Yield: 2/3 cup

Directions In the bowl of a food processor, puree bananas until smooth
- 3 to 4 ripe bananas (1 pound)
- 1 1/2 cups yogurt
- 3 tablespoons sugar
- Juice of 1/2 lemon
- 1 cup fresh blueberries

- 2 packages (10 ounces each) frozen strawberries in syrup, slightly thawed and undrained
- 1 container (6 ounces) Yoplait® Original strawberry yogurt
- 1 small banana, mashed
- 10 wooden sticks with rounded ends

1. Brown first 3 ingredients in the pot
- 2 lb. ground beef
- 4 chopped onions
- 1/2 lb bacon
- 2 cans mushrooms
- 2 large cans diced tomatoes or 4 small cans
- 2 cans tomato paste, 2 cans water
- 2 tbsp sugar
- 2 cans kidney beans drained & rinsed
- 5 whole chili peppers crushed
Gluten Free Corn Dogs

I use a small fryer so I cut my hot dogs in half and for some cut the ends off
- 1 egg
- 2/3 cup milk
- 1/2 cup cornmeal
- 2/3 cup flour* (I used Jules GF Flour)
- 1 Tablespoon sugar (use more if you like it sweeter)
- 1/2 teaspoon baking powder
- 1/8 teaspoon baking soda
- 1/4 teaspoon salt

- 3 1/2 quarts popped pop corn
- 1 cup brown sugar
- 1/2 cup butter or marg
- 1/4 cup corn syrup
- 1/2 teas salt
- 1/2 teas soda

Combining the dry ingredients
- 2.5 ounces sorghum flour (that’s about 1/2 cup, plus 2 tablespoons)
- 2.5 ounces brown rice flour, ground super fine, if possible (1/3 cup, plus 1 T)
- 2.5 ounces tapioca flour (1 tablespoon shy of 1/3 cup
- 2.5 ounces sweet rice flour (1/3 cup, plus 2 tablespoons)
- 1 teaspoon cinnamon
- 1 teaspoon baking powder
- 1/2 teaspoon xanthan gum
- 1/4 teaspoon guar gum
- 1/2 teaspoon salt
- 3.5 ounces unsalted butter, just out of the refrigerator (7 tablespoons)
- 3 ounces mild-flavored honey (1/4 cup)
- 3 to 6 tablespoons cold water
- cinnamon sugar (optional)

Instructions In an oven proof dish, combine your strawberries, rhubarb, sugar, and water/or juice
- 3 cups rhubarb, cut into small pieces
- 2 cups strawberries, fresh, cut up into small pieces
- 1/4 - 1 cup sugar (you decide how sweet you want it...I use 2/3 cup sugar...)
- 1/4 cup water or fruit juice (I use water)
- 2/3 cup flour (I use 1/3 white flour, 1/3 whole wheat flour)
- 2/3 cup rolled oats
- 1/2 cup brown sugar
- 1/8 tsp salt
- 1/3 cup melted butter or margarine
