- 1/2 cup roasted red pepper hummus (store bought) (Or substitute regular hummus & jarred roasted red peppers, drained, and pulse a few times in the food processor)
- 1/2 cup goat cheese crumbles
- 1/2 cup Greek plain yogurt
- 2 teaspoons stone ground mustard
- 2 teaspoons Simply Asia brand ‘Sweet & Spicy Saigon’ spice mixture
- 2 tablespoons sweet chili sauce (I used Williams & Sonoma—substitutions fine.)
- 1 teaspoon sea salt
- 1/4 teaspoon pepper
- 3 tablespoons fresh mint, chopped fine

- 1/2 cup black rice
- 1/3 cup black quinoa
- (Note: Can use only rice or quinoa, but the mixture is an interesting texture combo!)
- 1 cup chicken broth
- 1 cup water
- 1/4 teaspoon sea salt
- 4 tablespoon olive oil
- 1 tablespoon garlic, chopped
- 2 tablespoons shallots, chopped
- 6 leaves Tuscan kale cut into slivers (can substitute regular kale or another green)
- 1 tablespoon pine nuts (optional)
- 1 1/2 teaspoon cumin
- 1 teaspoon sea salt (divided)
- 1/4 teaspoon red pepper flakes
- 1/2 lemon (juice)
- 4 eggs
- 8 cherry tomatoes sliced in half lengthwise
- 1/3 cup roughly chopped cilantro and flat Italian parsley including some of the stems with the leaves

- 2 pounds whole fish (head on or off) sliced partially through the center
- 4 tablespoons butter
- 4 lemon slices
- 4 tablespoons avocado oil, can substitute olive oil
- 1 1/2 teaspoons sea salt, divided
- 1 teaspoons pepper, divided
- 2 tablespoons Simply Asia’s ‘Sweet & Spicy Saigon’ (you can substitute an Italian, Greek or Cajun seasoning mixture)
- 1 large Roma tomato, sliced thin
- 1 large yellow tomato, sliced thin
- 1/4 cup fresh herb combo—chives, thyme, and Italian Parsley, chopped
- 1/4 cup olive oil

- 1 tablespoon Jamaican Jerk seasoning mix
- 1 teaspoon sea salt
- 1/2 teaspoon red chili flakes

- 1/4 cup basil pesto (store bought)
- 1/4 cup Greek plain yogurt (can substitute sour cream)
- 1 egg, beaten
- 12-15 large kale leaves (washed and dried and stems removed)
