- 2 teaspoons pepper (divided)
- 1 teaspoon lemon pepper
- 4 thick chicken breast filets butterflied (not sliced completely through)
- 8 tablespooon + 1/2 cup Bella Sun Luci Sun Dried Tomato Pesto Sauce with Whole Pine Nuts (divided)~~substitute sun dried tomatoes with some olive oil + pine nuts
- 3 cups fresh spinach leaves
- 1/4 cup extra virgin olive oil
- 1 can (14-15 ounce) diced tomatoes with juice
- 6 green onions, chiffonade sliced (divided)
- 1 1/2 cups crumbled lemon/herb feta (can substitute plain feta)

- BURGER PATTIES:
- 2 pounds ground beef (80/20)
- 2 teaspoons sea salt
- 1 teaspoon coarse ground pepper
- 2 tablespoons Harissa paste
- 1/2 cup Greek plain yogurt
- 1/4 cup fresh mint, finely chopped
- 4 medium sharp cheddar cheese, smoked, thick slices
- Cooking spray
- ROASTED RED PEPPER SAUCE:
- 1 1/2 cups drained and pureed roasted red peppers
- 1 tablespoon lemon zest, grated
- 1/4 cup fresh mint, finely chopped
- 2 tablespoons extra virgin olive oil
- 1 teaspoon sea salt
- 1 tablespoon Harissa paste
- 1/3 cup mayonnaise
- GRILLED ONIONS:

- (Note: You could use frozen Italian green beans or fresh~~I do NOT recommend canned green beans.)

- NOTE: I used milk instead of water for a fluffier pancake. I used coconut oil.

- 1 pound ground bison
- 1 pound ground pork
- 2 eggs, beaten
- 1 tablespoon garlic, minced
- 2 teaspoons sea salt
- 2 teaspoons dried basil
- 2 teaspoons dried oregano
- 1/3 cup fresh parsley and cilantro, chopped
- 1 tablespoon stone ground mustard
