Biscotti: Authentic Tuscan

While in Poppi, Italy, I met the most wonderful Chef, Chef Laura and we swapped recipes
- 3 cups flour
- 1 1/3 cups sugar
- zest of a whole large orange
- 2 1/2 teaspoon baking powder
- 1/2 stick of room temperature butter
- 3 eggs/ room temperature
- 2 egg yolks/ room temperature
- 1 1/2 cups of whole almonds
Blueberry Streusel Muffins

Preheat oven 350* Cream the butter and sugar until light and fluffy, about 5 minutes
- Streusel:
- 1 1/2 stick soft butter
- 1 1/2 cups sugar
- 3 extra large eggs room temp
- 1 1/2 teaspoon vanilla
- 8 oz sour cream
- 1/4 cup milk
- 2 1/2 cups flour
- 2 teaspoon baking powder
- 1/2 teaspoon baking soda
- 2 half pints blueberries
- 3/4 cup flour
- 1/2 cup light brown sugar
- 1 teaspoon cinnamon
- 4 tablespoons cold butter, diced
Coconut Madeleines

I love these little cookies, or mini cakes
- 1 1/2 tablespoons butter to grease the pans
- 3 extra large eggs, room temp
- 2/3 cups sugar
- 1 teaspoons vanilla
- 1 stick butter, melted and cooled
- 1 cup flour
- 1/4 cup cornstarch
- 1/2 teaspoon baking powder
- 1/3 cup shredded coconut
Mashed Potatoes: Thanksgiving

Boil potatoes. Drain and place in mixer
- 4 lbs. golden potatoes
- 1 16 oz sour cream
- 1 stick butter
- 1 cup heavy cream
- 1 small container bouisin cheese
Chocolate Mousse by Chef Jean-Pierre Brehier

the chocolate must be at least 50% or more
- 8 oz semi-sweet chocolate
- 1 pint heavy cream
- 4 eggs, separated
- 1/3 cup liquor (kahula, Grand Marnier or rum)
- 1/4 cup sugar
- 1/4 cup sugar
Cake: Chocolate Ganache

This cake is a single layer cake
- Cake:
- 1 stick room temp butter
- 1 cup sugar
- 4 extra large eggs room temp
- 1 can of Hersheys chocolate syrup or 1 1/2 cups plus 2 tablespoon bottle syrup
- 1 tablespoon vanilla
- 1 cup flour
- Chocolate Ganache:
- 1/2 cup heavy cream
- 8 ounces good semisweet chocolate chips
- 1 teaspoon instant coffee granules
Mousse: Fresh Lemon

This is so refreshing and absolutely delicious
- 3 extra large whole eggs
- 3 extra large eggs, separated
- 1 cup plus 2 tablespoons sugar
- 2 teaspoons grated lemon zest
- 1 cup heavy cream
- 1/2 cup good bottled lemon curd, room temperature
Appetizer: Brie

Drizzle honey on cheese and pistachios
- 12 Slices toasted baget
- 12 oz. brie, small wheel
- honey
- pistachios, or walnuts
Cake: Unfrosted Vanilla Milk Cake

OMG! This is soo good. It has an incredible flavor, something like very buttery and almost nutty
- 2 cups all purpose flour
- 2 teaspoons baking powder
- 8 tablespoons butter
- 1 cup milk (you can use 2%, but I don't)
- 2 teaspoons vanilla extract
- 4 eggs, room temperature
- 2 cups sugar
Collard Green Gratin

This dish is full of flavor and very easy to make
- 5 cups heavy cream
- 3 cloves garlic, minced
- 2 cups Parmigiano-Reggiano cheese, divided
- 1 tsp cornstarch mixed with 1 tablespoon water
- 2 (1 lb) pkgs of chopped collard green
- 8 bacon slices
- 2 cups chopped yellow onion
- 1/2 cup panko breadcrumbs
- 1 tablespoon olive oil
