Banana Bread

Lots of times, I've made banana bread and noticed some recipes have had a bitter taste for some reason
- 1/2 cup butter, room temperature
- 1 cup sugar
- 2 eggs, beaten
- 1 cup sieved ripened bananas (about 3 large)
- 1 1/2 tablespoons sweet or sour milk
- 1 teaspoon lemon juice
- 1 1/2 cups sifted bread flour
- 1 1/2 teaspoons baking powder
- 1/2 teaspoon baking soda
- 1 cup chopped pecans or walnuts

Demo
- 1 pound eye round steak: sliced 1/4 inches thick
- 1 whole sliced onion
- 1 whole sliced red pepper
- 1 whole sliced green pepper
- 1 whole sliced fennel
- 1 1/2 cups chicken broth
- chicken/tomato bouillion powder
- 3 whole cloves garlic minced
- 1 teaspoon dried thyme
- 1 bay leaf
- 1 teaspoon dried oregano
- 1 small can stewed tomatoes
- flour for dredging
- kosher salt
- pepper
- 3 tablespoons olive oil
Beef Brisket with Caramelized Onions and Merlot Sauce

Preheat an oven to 325°F
- 1 first or flat-cut brisket, 4 to 5 lb.
- Salt and freshly ground pepper, to taste
- 2 Tbs. olive oil
- 1 1/2 cups chopped yellow onion
- 1/2 cup diced carrot
- 2 garlic cloves, finely chopped
- 1 can (28 oz.) plum tomatoes, with juices
- 2 cups Merlot or other full-bodied red wine
- 1 bay leaf
- 2 Tbs. olive oil
- 3 cups thinly sliced sweet onions such as Vidalia
- Salt and freshly ground pepper, to taste
- 1/2 cup pitted dried cherries
Puff Pastry-wrapped Salmon and Watercress Mousse with Champagne-Chive Butter Sauce and Buttered New Potatoes

- 10 ounces watercress, about 7 bunches, washed well and tough stems removed
- 4 egg whites, very cold
- 1/2 cup very cold heavy cream
- 5 ounces very cold scallops or peeled raw shrimp
- 1 teaspoon salt
- 1/4 teaspoon white pepper
- 1 pound puff pastry, thawed if frozen
- 1 side of salmon, about 3 pounds, boned and skin removed
- 1 egg beaten with 1 tablespoon water, for egg wash
- Sprigs fresh watercress, garnish
- 3 tablespoons minced shallots
- 1 cup Champagne
- 1/2 cup heavy cream
- 2 sticks butter, cut into small pieces
- Salt
- White pepper
- 1/3 cup finely chopped chives

- 2 1/2 pounds small, red new potatoes (about 1 1/4-inches in diameter)
- 1 1/2 teaspoons salt

Cook potatoes until fork tender
- 2 lean, 2 inch tenderloins
- 4 to 8 fingerling potatoes
- 5 tablespoons truffle butter
- 1 tablespoon light cream
- 2 egg yolks
- 2 eggs, well beaten
- flour
- seasoned bread crumbs
- Deep frying fat
- 1/2 cup Madeira
- 1/2 tablespoon veal demi-glace
Soup: Beef Barley

In a heavy soup pan, brown the oxtails in olive oil
- 2 lb oxtails
- 2 cups chopped leeks
- 1 cup chopped celery, about 2 stalks
- 2 cups chopped carrots
- 1 cup chopped onions
- 2 cloves minced garlic
- 2 sprigs thyme tied together
- 3 bay leaves
- 10 cups beef broth
- 1 teaspoon salt
- 1 teaspoon pepper
- 1 cup barley cooked in 4 cups water for 30 minutes
Cakes: Warm Chocolate

These should be served with Frangelico Ice Cream
- 2 sticks butter
- 8 oz. bittersweet or semisweet chocolate, chopped
- 5 large eggs
- 5 large yolks
- 1/2 cup sugar
- 1/2 cup flour
Borscht: Roasted Beet

Heat oven to 400 degrees F
- 1 pound beets
- Kosher salt and freshly ground black pepper
- 6 sprigs fresh thyme
- 6 tablespoons extra-virgin olive oil
- 1 medium onion, chopped
- 2 carrots, chopped
- 2 cloves garlic, chopped
- 6 cups chicken stock, heated
- 2 tablespoons red wine vinegar
- 1 tablespoon honey
- 1 Granny Smith apple, peeled
- 2 tablespoons chopped fresh dill
- Sour cream, for garnish
Sugar snap peas

- Sugar snap peas, blanched and refrigerated
- Sesame oil, dark
- Black sesame seeds

Preheat oven 350* 13 x 9 pan Crust: In mixer, cream butter and sugar and then add flour
- Crust:
- 2 sticks butter, unsalted and room temperature
- 1/2 cup sugar
- 2 cups flour
- Filling:
- 6 eggs
- 3 cups sugar
- 2 tablespoons lemon zes
- 1 cup lemon juice
- 1 cup flour
- Topping:
- 2 cups confectionary sugar
- 1/4 cup water
