You can make these ahead and store them in the fridge for up to 2 hours until you are ready to bake them off
- 2 oz Bittersweet Chocolate (60% or more)
- 2 tablespoons of milk, plus 2 teaspoons milk
- 1 tablespoon of sugar
- 1 egg yolk
- 2 teaspoons of super fine sugar
- 2 egg whites

This is excellent on salmon as a sauce, it can be thined out if preferred with a little half n half or cream
- 4 egg yolks [MAKE SURE ROOM TEMPERATURE]
- 6 tbs. fresh lemon juice
- 1 tsp garlic minced
- 2 tbls salt
- 2 tsp pepper
- 2 cups vegetable oil
- 1 cup olive oil
- 1 cup basil leaves
Pasta: Salami

Bring some water for the pasta to a boil over medium heat and salt it generously
- 2 2/3 cups ditalini or mezzi tubetti pasta
- 3 oz. (about 15 slices) Milano salami, scissored into strips
- 1 (14 ounces) can diced tomatoes

- 2 tablespoons butter
- 1 bouquet garni (mixed herb sachet or bag)
- 1 (15 oz.) or cannellini beans, drained and rinsed
