Gerry's Chicken Enchiladas

Cut chicken breasts into 1 inch stips
- 4 boneless, skinless chicken breast halves
- Mojito maranade
- 1 teaspoon vegetable oil
- 1 onion, chopped
- 1 (10 oz) can diced tomatoes with green chile peppers
- 1 (14.5 oz) can stewed tomatoes
- 12 small chile peppers, diced and seeded (optional)
- 1 (10 oz) can condensed cream of chicken soup
- 1 (14.5 oz) can chicken broth
- 1 bunch green onions, chopped
- 1/2 pint heavy cream
- 6 (6 inch) corn tortillas
- 3 cups shredded Cheddar cheese
- 1 (10 oz) can enchilada sauce
Wings: Buffalo

- 1/2 stick butter
- 2 teaspoons hot sauce
- 1 teaspoon salt
- 1/2 teaspoon cayenne pepper

Okay folks, here it is, the best ever cheesecake recipe
- 5- 8 oz packages soft cream cheese
- 1 3/4 cups sugar
- 1/4 teaspoon vanilla
- 1/4 teaspoon dried orange rind
- 1/2 teaspoon dried lemon rind
- 3 tablespoons flour
- 5 large eggs
- 2 egg yolks
- 1/4 cup cream
Granola: Homemade

This is fabulous with honey vanilla yogart and berries
- 3/4 cup vegetable oil
- 1/2 cup honey (Clover)
- 4 cups regular dry oat meal
- 2 cups coconut
- 2 cups blanched almonds
- (Optional: Assortment of dry fruit)
Zucchinni Blossoms: Ricotta Garlic Stuffed

While in school in Tuscany, we made stuffed zucchinni blossoms and they were incredible
- Stuffing:
- 12 large zucchinni blossoms
- 1 cup ricotta cheese
- 1 large egg
- 1/3 cup grated Parmesean cheese
- 1 clove garlic, minced
- 4 basil leaves, chopped fine
- 1 teaspoon salt
- Batter:
- 2/3 & 1/2 cup flour
- 1 cup plain soda water
- 1 pinch of cayenne powder
- 1 1/2 cup vegetable or peanut oil for frying
Pie: Kentucky pie with Bourbon

Now, generally speaking this pie is always made with walnuts
- 1/2 cup flour
- 1 cup sugar
- 2 beaten eggs
- 1/2 cup melted butter
- 2 tablespoons Kentucky bourbon
- 1 cup chopped pecans
- 1 1/4 cups semisweet chocolate chips
- 1 teaspoon vanilla
- 1 pie crust

Butter and lightly flour 6 (6-ounce) ramekins
- 1 cup (2 sticks) unsalted softened butter, plus extra for buttering molds
- 8 ounces bittersweet chocolate, chopped
- 1/2 teaspoon instant espresso powder
- 4 large eggs
- 4 large egg yolks
- 2/3 cup granulated sugar
- 4 teaspoons all-purpose flour, plus more for dusting molds
- 3 tablespoons Frangelico or hazelnut liqueur
- 1 cup fresh raspberries
- 1 cup fresh strawberries
- Fresh mint, for garnish
Stir-Fried Chicken with Cashews

Heat the oil in a wok or a large saute pan over high heat
- 3 tablespoons vegetable oil
- 1 1/4 pounds boneless, skinless chicken thighs, cut into 1/2-inch dice
- 1 teaspoon cornstarch
- 1/4 cup finely chopped green onion bottoms, plus 2 tablespoons thinly sliced green onion tops
- 2 teaspoons minced garlic
- 1/2 teaspoon crushed red pepper, or to taste
- 2 cups snow peas, ends and threads removed
- 1 large red bell pepper, stemmed, seeded, and julienned
- 1/2 red onion, thinly sliced
- 2 celery stalks, peeled and cut on a bias
- 1 cup chicken stock or canned, low-sodium chicken broth
- 1/4 cup hoisin sauce
- 2 tablespoons soy sauce
- 2 nests cellophane rice noodles
- 1/2 cup roasted cashews
- Salt and freshly ground black pepper

- 3/4 cup sugar
- 1/4 cup water
- 2 cans coconut milk
- 1 cup sweetened condensed milk
- 3 large eggs/ 2 egg yolks
- zest of a whole lime
- 1/4 cups coconut
Chicken Salad

Add chicken, tomatoes, and broccoli in a bowl
- 1 cup halved cherry tomatoes
- 2 cups broccoli florets blanched
- 1 1/2 cups mayonnaise
- 2 tbs white wine
- 1/4 cup dijon mustard
- 3 tbs whole grain mustard
- 1 tablespoon salt
- 1/2 tbl pepper
- 4 whole chicken breasts roasted 350* 30 minutes
