Mushroom Sauce

Melt Butter. Add mushrooms; sprinkle with flour; toss
- 3 - T. Butter
- 1/2 lb- Fresh Mushrooms, sliced
- 1 - T. Flour
- 1 - tsp. Soy Sauce
- 3/4 - Cup Light Cream or Half and Half
Guacamole Salad

Cut each avocado lengthwise into quarters, removing the pit
- 3 ripe avocados
- 1 fresh jalapeno chile, stemmed, seeded and finely chopped
- 1/2 white onion, diced
- 1/8 Teaspoon Chili Powder
- Juice of 1 lime
- 1/2 teaspoon salt
- Freshly ground black pepper
- 1 ripe tomato, seeded and diced (optional)
- Lettuce leaf, optional
- Corn tortilla chips

1. In a large skillet, bring 1 cup water, oil, salt, and pepper to a simmer over medium heat
- 2 tablespoons olive oil
- 1 teaspoon coarse salt
- 1/8 teaspoon ground pepper
- 1 pound green beans, trimmed and halved
- 1 medium red onion, cut into 1/2-inch wedges
- 2 teaspoons balsamic vinegar
Cranberry-Sweet Potato Quick Bread

Preheat oven to 350°. Combine first 7 ingredients in a large bowl; make a well in center of mixture
- 2 1/2 cups all-purpose flour
- 1 cup firmly packed brown sugar
- 1 1/2 teaspoons baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1/4 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg
- 3/4 cup no-sugar-added canned mashed sweet potato
- 3/4 cup egg substitute
- 1/3 cup orange juice
- 1/4 cup margarine, melted
- 1 cup chopped cranberries
- Cooking spray
- 2 tablespoons sliced almonds
