Sausage And Egg Casserole Recipe

Brunch dish you can make he night before
- Topping (optional):
- 6 slices bread, cubed
- 1 pound sausage
- 1/4 c green pepper (optional)
- 1/4 c. onion (optional)
- 1 - 2 cups sliced mushrooms (optional)
- 2 cups shredded Cheddar cheese
- 8 - 10 eggs, beaten
- 2 cups milk
- 1 tsp dry mustard
- 1 teaspoon, salt
- pepper to taste
- Before baking mix 1 can cream of mushroom soup with 1/2 can of milk. Spread over casserole.

- 1 1/2 c almond meal/flour
- 1 c chopped pecans
- 1/2 c ground golden flaxseeds
- 2 tsp ground cinnamon
- 1 1/2 tsp baking powder
- 1 tsp baking soda
- 1 tsp ground nutmeg
- 1/2 tsp ground cloves
- 1/2 tsp sea salt
- 1 c shredded carrots
- 2 Tbsp orange peel
- 1/2 c raisins (optional)
- 2 eggs, separated
- 1/2 c xylitol or 1/4 tsp liquid stevia or to desired sweetness
- 1/2 c sour cream or coconut milk
- 1/4 c coconut oil, extra-light olive oil, or butter, melted
- 1/2 c applesauce
- 1/4 tsp cream of tartar
Moroccan Chicken Stew

Directions 1. In a shallow bowl combine flour, coriander, cumin, paprika, salt, and cinnamon
- 1 tablespoon all-purpose flour
- 1 teaspoon ground coriander
- 1 teaspoon ground cumin
- 1 teaspoon ground paprika
- 1/2 teaspoon salt
- 1/2 teaspoon ground cinnamon
- 1 pound skinless, boneless chicken thighs, cut into 1-inch pieces
- 2 medium onions, cut into wedges
- 3 cloves garlic, minced
- 1 tablespoon olive oil
- 1 28 ounce can crushed tomatoes, undrained
- 1 15 ounce can garbanzo beans (chickpeas), rinsed and drained
- 1 1/2 cups water
- 1/2 cup raisins
- 1/3 cup small pitted ripe olives
- 3 cups hot cooked couscous
- 1/4 cup snipped fresh cilantro
Beet and Wheat Berry Salad with Spinach and Parmesan

Add the wheat berries (or farro) and two cups water to a medium saucepan
- 1 cup wheat berries or farro, rinsed
- 3 medium beets (about 1/2 pound), stems removed
- 2 tablespoons red wine vinegar
- 1 teaspoon Dijon mustard
- 1 tablespoon olive oil
- 1/4 teaspoon black pepper
- 2 large shallots, minced (about 2 tablespoons)
- 1/4 cup chopped parsley
- 10 ounces fresh spinach*
- 2 tablespoons shaved or shredded Parmesan cheese
- We used one 10-ounce bag of fresh spinach, which yielded about 8 cups.
Roasted Yam and Kale Salad

Preheat an oven to 400 degrees F (200 degrees C)
- 2 jewel yams, cut into 1-inch cubes
- 2 tablespoons olive oil
- salt and freshly ground black pepper to taste
- 1 tablespoon olive oil
- 1 onion, sliced
- 3 cloves garlic, minced
- 1 bunch kale, torn into bite-sized pieces
- 2 tablespoons red wine vinegar
- 1 teaspoon chopped fresh thyme

Directions In a bowl, combine all ingredients
- 6 Roma tomatoes, chopped
- 4 garlic cloves, minced
- 2 seeded and minced jalapenos, plus 2 roasted, skinned and chopped jalapenos
- 1 red bell pepper, fine dice
- 1/2 red onion, fine chopped
- 2 dry ancho chiles, seeded, cut into short strips and snipped into pieces
- 1 tablespoon olive oil
- 1 lime, juiced
- Chili powder, salt, and pepper, to taste
- Fresh scallions, cilantro or parsley, to taste
Quick Ranch Dressing

Makes 3 to 4 tablespoons, enough to dress 1 salad
- 2 tablespoons cultured buttermilk, well shaken
- 1 tablespoon mayonnaise
- Salt and freshly ground black pepper
- 1/2 teaspoon rice vinegar, optional
- 1/4 teaspoon garlic powder, optional
- 1 to 3 teaspoons finely chopped fresh chives, mint, and/or Italian parsley, optional
Asparagus Gruyere Tart

Molasses marinade for grilled pork loin

Marinade we use on pork loin that is cooked slowly on the weber grill, about two hours
- 1/4 cup plus 2 Tbsp molasses
- 2 Tbsp fresh lemon juice
- 2 Tbsp ketchup
- 1 Tbsp oil
- 1 1/4 tsp dried crushed red pepper
- 1/2 tsp cumin
- 1/4 tsp salt
- 2 cloves garlic, minced
Quinoa and Black Bean Chili

Bring the quinoa and water to a boil in a saucepan over high heat
- 1 cup uncooked quinoa, rinsed
- 2 cups water
- 1 tablespoon vegetable oil
- 1 onion, chopped
- 4 cloves garlic, chopped
- 1 tablespoon chili powder
- 1 tablespoon ground cumin
- 1 (28 ounce) can crushed tomatoes
- 2 (19 ounce) cans black beans, rinsed and drained
- 1 green bell pepper, chopped
- 1 red bell pepper, chopped
- 1 zucchini, chopped
- 1 jalapeno pepper, seeded and minced
- 1 tablespoon minced chipotle peppers in adobo sauce
- 1 teaspoon dried oregano
