This is a recipe of my daughters
- 4 large baking potatoes
- 1 teaspoon olive oil
- 1 (3 ounce) package cream cheese, softened
- 1/2 cup sour cream
- 1/4 cup butter
- 1/2 teaspoon garlic powder
- 1 tablespoon minced chives or 1 tablespoon green onion
- 1 tablespoon green onion
- 8 slices crisp-cooked bacon, crumbled
- 1 1/2 cups grated cheddar cheese
Easy Garlic Rice

Sometimes I use 2 1/2 tsps of roasted dry garlic flakes instead of the fresh
- 2 tablespoons olive oil
- 1 medium onion, chopped fine
- 3 garlic cloves, minced fine
- 1 cup long grain rice
- 2 cups chicken broth
- 1/2 teaspoon dried thyme
- 1 bay leaf
- 1/4 cup parsley, chopped

- Vegetable oil, for frying
- 8 boneless skinless chicken thighs
- 2 eggs 2 teaspoons cayenne pepper Salt and freshly ground black pepper 1 cup all-purpose flour 1/4 cup cornstarch
- 1 orange, zested
- 1 1/2 cups orange juice 1/3 cup dark brown sugar 6 tablespoons butter
- 2 teaspoons hot pepper flakes 1 1/2 tablespoons Worcestershire sauce Stormy Rice, recipe follows
- In a large heavy-bottomed pot, pour in enough oil to fill the pot about a third of the way. Heat over medium heat until a deep-frying thermometer inserted into the oil reaches 350 degrees F.
- Inactive Prep Time: 5 minutes
- 2 tablespoons vegetable oil 2 cloves garlic, minced 1 cup white rice, rinsed

- 1 1/2 cups mayonnaise (Hellman's is best for this, do not use salad dressing)
- 1 1/2 cups sour cream

- 1 teaspoon seasoning salt (or to taste, or use white salt)
- 1 teaspoon ground black pepper
- 4 -5 green onions, chopped

- 1 1/2 cups cheddar cheese, finely cubed (or coarsley shredded)

This light and delicious dinner came to me by way of Chef Josh Korn of Paul Martin's American Bistro
- 2 -7 ounces portions fresh yellowtail fish fillets
- 1/2 teaspoon kosher salt
- 1/4 teaspoon fresh cracked black pepper
- 1 whole pineapple, peeled, sliced into 1/4 inch slices, and diced
- 1 small red onion, peeled, sliced 1 inch thick, grilled, and diced
- 1 red bell pepper, diced
- 1 jalapeno pepper, diced
- 1/4 cup chopped cilantro

- 4 pieces chicken breast halves
- Salt and freshly ground black pepper
- All-purpose flour, for dredging
- 1 large egg
- Several sprigs fresh thyme, leaves finely chopped
