- 1 1/4 lbs red potatoes, sliced 1/4 inch thick (about 3 medium)

- 4 fresh, firm bananas, peeled and cut into 1 to 2-inch pieces

Buffalo Chicken Dip

Directions Heat chicken and hot sauce in a skillet over medium heat, until heated through
- 2 (10 ounce) cans chunk chicken, drained
- 2 (8 ounce) packages cream cheese, softened
- 1 cup Ranch dressing
- 3/4 cup pepper sauce (such as Frank's Red Hot®)
- 1 1/2 cups shredded Cheddar cheese
- 1 bunch celery, cleaned and cut into 4 inch pieces
- 1 (8 ounce) box chicken-flavored crackers
Pecan Pie Pockets

In a Dutch oven or deep fryer, heat the oil over medium heat to 350 degrees F
- Vegetable oil, for frying
- 1 cup sugar
- 2/3 cup light corn syrup
- 1/3 cup butter
- 2 large eggs
- 1 1/2 cups chopped pecans
- 1 teaspoon vanilla extract
- 1/8 teaspoon salt
- Flour, for dusting
- 1 premade pie crust
- 1 egg yolk, beaten
- Confectioners' sugar
Kittencal's Ranch Stuffed Potatoes

Preheat oven to 350 degrees F
- INGREDIENTS:
- 4 large russet baking potatoes
- 1 (3 ounce) package cream cheese, softened
- 1/2 cup sour cream ( can use more)
- 1/2 (1 ounce) package Hidden Valley dry ranch dressing mix
- 1/4 cup butter
- 2 bacon slices, cooked and finely crumbled
- 1/2 cup shredded Swiss cheese
- 1/2 cup shredded cheddar cheese
- salt and fresh ground black pepper, to taste
- freshly grated Parmesan cheese

- 2 cups uncooked elbow macaroni
- 2 tablespoons minced onion
- 4 tablespoons all-purpose flour
- 1 teaspoon salt, plus more for seasoning
- 3/4 tablespoon dry mustard
- 1/4 teaspoon paprika
- 2 cups milk
- 3 cups shredded Cheddar, divided
- 2 ripe tomatoes, blanched, peeled, and cut into 1/2-inch thick slices

Grandma Yearwood's Coconut Cake with Coconut Lemon Glaze

- 1 cup (2 sticks) butter, room temperature, plus more for greasing

- 1 teaspoon vanilla extract
- One 12-ounce box vanilla wafers, finely crushed
- One 6-ounce package frozen or fresh grated coconut, thawed

- Grated zest of 2 large lemons
- 1/4 cup fresh lemon juice (about 2 large lemons)

Pineapple Cheese Ball

I received this recipe from a friend at work
- 2 (8 ounce) packages softened cream cheese
- 1 (8 ounce) can crushed pineapple, drained
- 2 cups finely chopped pecans, divided into two one cup portions
- 1/4 cup finely chopped green bell pepper
- 2 tablespoons grated onions or 2 tablespoons finely chopped green onions
- 2 tablespoons finely chopped green onions
- 2 teaspoons seasoning salt (I use Lawry's)
Peanut Butter Balls

This is a recipe that my mom used to make at Christmas
- 2 tablespoons butter, softened
- 2 cups peanut butter
- 2 cups powdered sugar
- 2 cups Rice Krispies
- 2 cups semi-sweet chocolate chips
- 2 tablespoons paraffin wax (added by your best judgment so the amount might be off)
Kittencal's Salisbury Steak

This is total comfort food at it's best, I have been making this for over 20 years and it is still one of my family
- 1 1/2 lbs ground beef
- 1 -2 tablespoon minced fresh garlic (or use 1 teaspoon garlic powder)
- 1 large egg, beaten
- 1/2 of a package dry onion soup mix (can use the whole 2-ounce package)
- 2 tablespoons Worcestershire sauce
- 1/4 cup milk
- 1/2 cup dry breadcrumbs (more if needed to hold the mixture together)
- 1/2 teaspoon fresh ground black pepper (optional)
- 1 medium onion, chopped
- 1 -2 tablespoon fresh minced garlic (optional, I like to add it in)
- 1 (10 ounce) can sliced mushrooms, drained
- 2 (10 1/2 ounce) cans low-sodium condensed cream of mushroom soup, undiluted (for more gravy use 3 cans)
- 1/2 of a package dry onion soup mix (I use Lipton's 2-ounce package)
- 1/4 cup grated parmesan cheese
- 2 -4 teaspoons Worcestershire sauce (optional)
- 1 teaspoon ground black pepper (or to taste)
- 1/4 cup 18% table cream (to thin if necessary)
