- 1 LB red-skinned potatoes cut into wedges
- Olive oil
- S&P
- 5 OZ spinach
- 1/2 recipe Dijon Vinaigrette (see Grilled Chicken Cordon Bleu)
ITALIAN GRILLED CHEESE SANDWICH

Preheat large heavy skillet on medium-high heat (about 5 to 7 minutes)
- 8 slices (1/2-inch thick)artisan-style French or Italian bread
- Softened butter
- 8 teaspoons
- black olive spread or tapenade of kalamata olives
- 1-1/2 cup
- provolone cheese, grated
- 3/4 cup mozzarella cheese, grated
- 1 cup
- roasted red peppers, drained and chopped
- 1/4 cup
- pepperoncini, drained and minced
- 16 slices Italian salami or ham, thinly sliced
ROYAL RICE WITH WILD MUSHROOMS

1. In large saucepan melt butter over medium-low heat
- 1 TBS butter or olive oil
- 1 8-10 oz package baby bellas, sliced
- 2 cloves garlic, minced
- 1 cup rice blend (Royal Blend Texmati, Red Rice blend)
- 14 oz chicken broth
- 1/2 cup frozen peas
- 1/2 cup grated parmesan

1. Combine sugar, 3TBS flour, mace and nutmeg in large bowl
- 3/4 cup sugar
- 1/4 cup + 3TBS flloour
- 1/8 tsp ground mace
- 1/8 tsp nutmeg

- 1/3 cup firmly packed brown sugar

- 4 cups cranberries
- 5 qts water divided
- 3 cups sugar
- 1 cup red hots
- 12 whole cloves

- 2 tablespoons minced fresh rosemary
