GRILLED CHICKEN MARSALA

CUISINE AT HOME
- 4 Boneless, skinless chic breast, season w/ S&P
- 12 OZ Portobello mushrooms, stems and gills removed
- Olive oil
- Sauce
- 2 TBS minced fresh garlic
- 1 tBS EVOO
- 1 cup dry marshals (don't want sweet marsala)
- 1/4 cup chic Brock
- 2 tap cornstarch
- 4 tBS butter
- 2 tap fresh thyme leaves
GREEK APPETIZER

Cream together the cream cheese and miracle whip
- 8 oz cream cheese, softened
- 1/2 cup miracle whip
- 1 cup chopped tomatoes
- 1 cup diced cucumber
- 1/2 cup chopped kalamata olives
- 1 cup herbed feta cheese crumbles
PIZZA DOUGH

- 3 1/2 to 4 cups bread flour, plus more if needed
- 1 tsp sugar
- 1 envelope instant dry yeast
- 2 tsp kosher salt
- 1 1/2 cups warm water (110º)
- 2 Tbsp plus 2 tsp olive oil
LEMON ICEBOX CHEESECAKE PIE

1. MAKE CRUST Adjust oven rack to middle position and heat oven to 350 degrees
- CRUST
- 10 lemon sandwich cookies , broken into pieces (about 1 1/4 cups)
- 2 tablespoons unsalted butter , melted
- 1 teaspoon grated lemon zest
- CURD
- 1 large egg plus 1 egg yolk
- 1/4 cup sugar
- Pinch salt
- 2 tablespoons lemon juice
- 1 tablespoon unsalted butter
- 1 tablespoon heavy cream
- FILLING
- 1/4 cup lemon juice from 2 lemons
- 1 envelope (2 3/4 teaspoons) unflavored gelatin
- 1 1/2 pounds cream cheese , cut into 1-inch pieces and softened
- 3/4 cup sugar
- Pinch salt
- 1 1/4 cups heavy cream , room temperature

K.C.-STYLE BBQ BAKED BEANS

1. Oven 350 degrees 2. Combine all ingredients except bacon
- 2-16 oz cans pork and beans, drained
- 3/4 cup KC Masterpiece BBQ sauce
- 2 tsp raisins
- 1/2 cup packed brown sugar
- 1 granny smith apple, peeled, cored and chopped
- 1 medium onion, diced
- 3 strips bacon, cut in half
WARM MUSHROOM SALAD

- 4 Tbsp. olive oil
- 3 minced garlic cloves
- 12 oz. mixed mushrooms (such as oyster, shiitake and cremini)
- 1/4 cup freshly chopped parsley
- 1/4 cup chopped walnuts
- Kosher salt and freshly ground black pepper to taste
- Freshly grated pecorino or Parmesan cheese for garnish
CRANBERRY BOURBON SLUSH

1. Combine all ingredients
- 2-12 oz cans frozen cranberry - raspberry juice
- 2-12 oz cans lemon-lime soda
- 1-12 oz can prepared OJ
- 3/4 can (8 oz) bourbon
AVOCADO/TOMATO/MOZZARELLA SALAD

1. Lightly Toss all ingredients together
- 2 avocados, cubed
- 2-3 tomatoes, cubed
- 1 ball fresh mozzarella, cubed
- 2 TBS EVOO
- 2 tap basil
- Salt and pepper to taste
SMOKEHOUSE BURGERS

- 2 lbs ground chuck
- 1 tsp ground pepper
- 1/2 tsp salt
- 3 TBS barbecue sauce
- 2 tsp garlic powder
- 2 tsp onion powder
- 1/2 tsp salt
- 1 tsp pepper
- 2 cups wood chips
