Preheat oven to 400 degrees F
- muffin mix
- 1 egg
- 1/2 c. sour cream
- 1/2 c. creamed corn
- 1/3 c. red enchilada sauce
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 tsp. cumin
- 1 tsp. chili powder
- 1 lb. ground beef
- 1 c. cheddar cheese, shredded
- 1 c. Monterey Jack Cheese, shredded
- small handful cilantro leaves, chopped (optional)
- kosher salt
- ground pepper
BACON HORSERADISH DEVILED EGGS

1. Cut peeled eggs in half length wise and place yolks in a mixing bowl, set the whites aside
- 12 hard boiled eggs – peeled
- 1/2 cup mayo
- 1 tablespoon prepared horseradish
- 1/4 cup sour cream
- 1 tablespoon dijon mustard
- 4 sliced cooked, crumbled bacon
- 3 minced green onion stalks
- salt and pepper to taste
SPICED BABY BACK RIBS

1. Cut each rack of ribs in half or quarters to fit in your slow cooker
- 4 lbs baby back ribs
- 2 TBS sweet or hot paprika
- 1 TBS kosher salt
- 1/4 cup dark brown sugar, firmly packed
- 2 TBS chili powder
- 1 TBS minced garlic
- 1 TBS ground cumin (USE LESS!!!!!)
- 1-1/2 tsp ground mustard
- 1/4 tsp cayenne pepper
- 18-19 oz bottle BBQ sauce
PASTA CON BROCCOLI

Can add fresh mushrooms
- 1 lb medium shell noodles
- 6 TBS butter
- 1 1/2 cup Parmesan cheese
- 2 tsp garlic powder
- 1 tsp parsley flakes
- 1 pint 1/2 and 1/2 (I use 2%)
- 8 oz cream cheese
- 1 tsp pepper
- 1 tsp onion salt
- 1 tsp basil
- broccoli, frozen or fresh
ITALIAN MEATLOAF

In a small skillet, heat the olive oil over med
- Italian meatloaf1 lb. ground beef
- 1/2 lb. ground mild Italian sausage
- 1 small onion, finely chopped
- 1/2 C. chopped bell pepper
- 1 tsp. olive oil
- 1 tsp. Worcestershire sauce
- 1 clove garlic, minced
- 1/2 tsp. oregano
- 1/2 tsp. basil
- 1/2 tsp. parsley
- 1 egg, beaten
- 3/4 C. Italian bread crumbs
- 2 slices white bread, crumbled
- 1 T. milk
- 8 oz. shredded mozzarella cheese, reserve 3/4 C. for topping
- 1/4 C. Parmesan cheese
- 1 C. marinara sauce, plus 1/2 -3/4 C. more for topping (Good Homemade Pizza/Marinara Sauce here)

HONEY-GARLIC CHICKEN WINGS

- 1/2 c flour
- 1 tsp garlic powder
- 1/2 tsp pepper
- 1/2 tsp salt
- 2 lbs chicken wings
- Oil - enough to fill pan w/ 1/4" oil
- Honey-Garlic Sauce *** probably only need to make 1/2 of this recipe
- 1 TBS butter
- 1 TBS garlic
- 1 TBS ginger
- 1/2 cup soy sauce
- 5 TBS honey
- 1 tBS brown sugar
- 1 tsp sesame seeds
- scallions
CUCUMBER AND CELERY SALAD WITH TUNA

In a medium bowl, stir together poppy seeds, vinegar, sugar, and oil
- 2 teaspoons poppy seeds
- 3 tablespoons rice vinegar
- 1 tablespoon sugar
- 2 tablespoons extra-virgin olive oil
- 2 cucumbers, halved lengthwise and cut into 1/4-inch half-moons (6 cups)
- 3 celery stalks, cut into 1/4-inch pieces, inner leaves reserved
- 2 cans (5 ounces each) solid white tuna in water, drained and flaked
- Coarse salt and ground pepper
FAJITA FRITTATA

BEEF STROGANOFF SOUP

- 2 pounds stew meat
- 2 Lipton onion soup mix packets, dry
- 64 ounces beef broth
- 2 Tablespoons Worcestershire Sauce
- 8 to 16 ounces sliced mushrooms
- 2 cups egg noodles, cooked according to package directions
- 1 cup sour cream
- 1 cup half and half
