Chicken a la King on Herb Biscuits

Combine the milk and cream and heat to a simmer
- 1 1/2 cups milk
- 1/2 cup heavy cream
- 4 tablespoons unsalted butter
- 4 ounces button mushrooms, wiped clean, stems trimmed, and thinly sliced
- 1/4 cup chopped yellow onions
- 1/4 cup chopped green bell peppers
- 1 teaspoon minced garlic
- 1/4 cup all-purpose flour
- 1/4 cup plus 2 tablespoons dry sherry
- 1/2 cup chicken stock or canned low-sodium chicken broth, heated
- 2 teaspoons chopped fresh tarragon leaves
- 3/4 teaspoon salt
- 1/2 teaspoon ground white pepper
- 3 large egg yolks
- Quick Cooked Chicken, diced, recipe follows, or 2 1/2 cups shredded or diced cooked chicken
- 1 teaspoon chopped parsley leaves
- 1/2 teaspoon fresh lemon juice

- 2 pounds Idaho potatoes, peeled and cut into chunks

- 1/2 tablespoons extra-virgin olive oil
- 4 slices good quality bacon or peppered bacon, chopped
- 2 pounds ground sirloin
- 1 onion, chopped
- 1/2 pound button mushrooms, quartered

- 2 tablespoons all-purpose flour
- 1 1/2 cups beef stock

- 1 egg yolk
- 3 tablespoons sour cream
- 1/2 pound blue cheese, crumbled

- •1 teaspoon ground coriander
- •1/2 teaspoon red pepper flakes
- •2 pounds boneless, skinless chicken breasts, trimmed and cut into thin strips about 3 by 1/4-inch each
- •35 to 45 medium (7-inch) bamboo skewers, soaked in water for 15 to 30 minutes
