Olive and Garlic Soft Cheese Spread

Place olives in food processor and grate in garlic, add cream cheese and ricotta cheese
- •1 cup large olives with pimiento
- •1 clove garlic
- •1 (8-ounce) package cream cheese, softened
- •1 cup ricotta cheese
- •1/2 cup chopped hazelnuts, toasted
- •1 sliced whole-grain baguette
- •Parmesan pita crisps, store-bought
- •1 celery heart, cut into sticks
Sage, Orange, and Clove Rotisserie Turkey

- For a 12 to 14 pound turkey, start with a rub consisting of:
- 2 Tablespoons granulated orange peel
- 1 Tablespoon kosher salt
- 1 Tablespoon dried sage
- 1/2 teaspoon freshly ground black pepper
- 1 Tablespoon vegetable oil
- Mix in a small bowl, the rub the turkey with the mixture.
- You will also need:
- 2 small oranges washed and dried
- 6 garlic cloves
- 12 whole cloves
- 1 bunch of sage
German Potato salad

- •1 yellow onion, quartered

Creamy Asparagus Risotto With Pine Nuts

Based on a recipe out of a little book called "Perfect Risotto", with some amendments
- 1/4 cup olive oil
- 1 onion, finely chopped
- 2 garlic cloves, crushed
- 1/4 cup pine nuts
- 2 teaspoons fresh rosemary, chopped
- 1 cup arborio rice
- 1 cup dry white wine
- 4 cups vegetable stock, simmering
- 1 (0.75 lb) can asparagus, pieces
- 4 tablespoons butter
- 1/4 cup parmesan cheese, grated
- fresh ground black pepper
- salt
- additional parmesan cheese, to taste

- •4 large sweet potatoes
- •2/3 cup packed brown sugar
- •2 tablespoons orange juice
- •1 teaspoon orange zest
- •1/2 teaspoon freshly grated nutmeg
- •2 cups shredded coconut, sweetened
- •1/2 cup granulated sugar
- •1 teaspoon ground cinnamon
- •1 large marshmallow per potato ball

- Sauce:
- •2 tablespoons unsalted butter
- •4 teaspoons all-purpose flour
- •1 1/4 cups whole milk
- •1/4 teaspoon salt

- •1 (15-ounce) container whole milk ricotta cheese
- •1 (10-ounce) package frozen chopped spinach, thawed, squeezed dry

- 1 large white onion, sliced thickly lengthwise
Brussels Sprouts with Bacon
