Cranberry Bread

Sift flour, sugar, baking powder, salt and baking soda nto a large bowl
- 2 cups sifted all purpose flour
- 1 cup sugar
- 1 1/2 tsp baking powder
- 1 tsp salt
- 1/2 tsp baking soda
- 1/4 cup butter
- 1 beaten egg
- 1 tsp grated orange peel
- 3/4 cup orange juice
- 1 1/2 cups raisins
- 1 1/2 cups fresh/frozen cranberries, chopped
Jam Cookies

Blend dry ingredients with shortening and egg; add vanilla
- 1 2/3 cup flour
- 1/3 cup sugar
- 1/2 tsp salt
- 1/2 cup shortening
- 1 egg
- 1 tsp vanilla
- Jam - flavor of your choice
Pot Roast with Mushroom Gravy

Prep 15 minutes Cook LOW 8-10 hours
- 1 # red potatoes, cut into wedges
- 8 ozs. baby carrots
- 1 8 oz pkg presliced fresh mushrooms
- 1 onion, cut into 1" wedges through the core
- 2 ribs celery, sliced
- 3 # beef chuck roast
- 1 14 oz can reduced-sodium beef broth
- 1 10 oz. can mushroom gravy
- 1 1.5 oz. packet slow cooker beef stew seasoning mix
Scalloped Potatoes with Ham

In a saucepan, melt butter over med low heat; add celery, green onions, carrots, and ham
- 3 # peeled potatoes, thinly sliced, about 6-8 cups sliced potatoes
- 3 Tblsp butter
- 1/2 cup chopped celery
- 6 green onions, with about 3" of green top, chopped
- 1/2 cup chopped carrots
- 1 to 1 1/2 cups diced cooked ham
- 3 Tblsp flour
- 1 1/4 to 1 1/2 cups milk
- 1 1/2 cups shredded cheddar cheese, divided
Do-Nut Muffins

Beat together shortening and sugar
- 1/3 cup shortening
- 1 cup sugar
- 1 egg
- 1 1/2 cups flour
- 1/2 cup milk
- 1 1/2 t baking powder
- 1/2 t salt
- 1/2 t nutmeg
- 1 t cinnamon
Parmesan Garlic Toast

1) Preheat oven to 450 oven
- 6 French rolls, split in half (Sara lee) or 6 hoagie buns
- 1/2 stick (1/4 cup) butter, melted
- 1 t bottled crushed garlic
- 1/2 t Italian seasoning
- 1/2 cup grated Parmesan cheese
Orange Spiced Harvest Stew

Great to serve on a cool Fall day
- Bouquet garni:
- 4 T veg oil
- 3 # beef chuck in 1" cubes
- 2 med onions, chopped
- 2 cloves garlic, minced
- 1/2 small can tomato paste
- 1/2 cup flour
- 3 cups beef broth
- 2 cups good red wine, pinot noir
- 3 parsnips, sliced
- 3 Yukon golden potatoes, peeled and cut in 1/2" cubes
- 3 carrots, sliced
- 3 ribs celery, sliced
- 3 cups buttered squash in 1/2" cubes
- in a piece of cheesecloth, tie up 2 bay leaves, 4 cloves, 6 sprigs of parsley, 2-3" springs thyme, zest of 1 orange (with no white pith)
- 1 10-12# pumpkin
Christmas Tree Pull-apart Rolls

Very yummy ... so festive with dinner!
- 36 unbaked frozen rolls
- 2 T butter, melted
- 2 t dried parsley, crumbled
- garlic salt to taste
- 1/4 cup Romano cheese, grated
- additional dried parsley
Morning Glory Bundt Muffins

Grease and flour 12 Bundt muffin cups (2 pans), Soak raisins in water until soft; drain and set aside
- 3/4 cup honey
- 1 1/4 cup flour
- 2 eggs
- 1 tsp baking powder
- 1 1/2 cups shredded carrots
- 1/2 tsp salt
- 1/4 cup raisins
- 1/2 cup water
- 1/4 cup vegetable oil
- 1/4 cup chopped nuts (optional)
Corn Dip

Great appetizer dip. Serve with "Scoops"
- 1/2 cup Mayonnaise
- 1/2 cup Sour Cream
- 4 scallians, chopped
- 1 (15oz) can Mexcali corn, drained
- 1 cup shredded sharp cheddar cheese
- Garlic to taste
- Pepper to taste
