Baked Brie in Puff Pasty with Apricot or Raspberry Preserves

- 1/2 pkg frozen puff pastry, thawed
- 1 (8oZ) pkg brie cheese, round
- 1/8 cup toasted almonds, slices (optional)
- 1/4 cup apricot preserves
Crockpot Fish Chowder

Thaw frozen fish in ref. Cut into bite-sized pieces
- 2 # frozen fish filets (catfish, haddock etc.)
- 1/4 # bacon or salt pork, diced
- 1 med. onion, chopped
- 4 med. potatoes, peeled and cubed
- 2 cups water
- 1 to 1 1/2 tesp salt, to taste
- 1/4 tsp pepper
- 1 can (12ozs.) evaporated milk
Sausage Stuffed Mushrooms

Heat oven to 325. Trim mushroom stems and finely chop; set aside
- 16 extra large white mushrooms, caps and stems separated
- 5 Tbsp olive oil
- 2 1/2 tbsp Marsala wine or dry sherry
- 3/4 # sweet Italian sausage, casings removed
- 6 scallions, white and green parts finely chopped
- 2 cloves garlic, minced
- 1 tsp kosher salt
- 1/2 tsp ground black pepper
- 2/3 cup panko crumbs (Japanese bread crumbs)
- 5 oz mascarpone cheese
- 1/3 cup parmesan
- 2 1/2 tbsp minced flat-leaf pasley
Pizza Potatoes

Heat oven to 400. Empty scalloped potatoes slices along with packet of seasonings into 2 qt casserole dish
- 1 pkg. scalloped potatoes
- 1 can (16oz tomatoes)
- 1 1/2 cups water
- 1/4 tsp oregano leaves
- 1 pkg (4oz) sliced pepperoni
- 1 pkg (4oz) shredded mozarella cheese
Emeril's Spaghetti Pie

- 1 tsp salt
- 1/2 # dried spaghetti
- 2 tsp olive oil, plus 1 Tblsp
- 1 cup Basic Red Sauce, recipe follows, or store-bought sauce
- 1/2 cup chopped green bell pepper
- 2 tsp minced garlic
- 1 tsp Emeril's Original Essence
- 1 tsp Italian Seasoning
- 1/4 tsp crushed red pepper flakes
- 1 1/2 cups cubed mozzarella (4 ozs)
- 1/2 cup chopped black olives, optional
- 4 ozs button mushrooms, wiped clean and thinly sliced
- 4 large eggs
- 1/2 cup whole milk
- 3/4 cup sliced pepperoni
- 1/2 cup grated Parmesan
