Cauliflower Casserole

Cook cauliflower in boiling salted water until just crisp-tender about 6 minutes
- 1 large cauliflower, broken into flowerets
- 6 Tbls butter
- 1/4 cup flour
- 1 tsp salt
- 2 cups milk
- 2 Tbls prepared mustard
- 1/2 cup soft bread crumbs
- 1/4 cup Parmesan cheese

Place pecans in a single layer on a baking sheet
- Chocolate Frosting:
- 1 cup chopped pecans
- 1 cup butter
- 1 4oz semisweet choc. baking bar, chopped
- 2 cups sugar
- 1 1/2 cups all-purpose flour

Pumpkin Whoopie Pies

A seasonal favorite....they freeze really well too!
- Cream Cheese filling:
- 1 - 15 oz can of pumpkin
- 2 large eggs
- 1 cup veg oil
- 2 cups firmly packed brown sugar
- 2 Tblsp molasses
- 1 teas salt
- 1 teas baking powder
- 1 tsp ginger
- 1 tsp baking soda
- 1 tsp cinnamon
- 3 heaping cups flour
- 6 oz cream cheese, softened
- 1/2 stick of softened butter
- 2 cugs conf. sugar
- 3 heaping Tbls fluff
- 2 tsp water
Broccoli Chicken Potato Parmesan

Heat the oil in a 10" skillet over med heat
- 2 Tblsp vegetable oil
- 1 # small red potatoes, sliced 1/4" thick
- 1 can (10 3/4 oz) condensed broccoli cheese soup
- 1/2 cup milk
- 1/4 tsp garlic powder
- 2 cups fresh or frozen broccoli flowerets
- 1 pkg (10oz) refgrigerated cooked chicken breast strips
- 1/4 cup grated Parmesan cheese
