Shrimp with Pernod - La Vielle Maison Boca Raton

In a large skillet over high heat, sauté the green peppers and onion briefly with olive oil
- 2 medium green peppers, julienne
- 1 medium onion, Julienned
- 4 oz olive oil
- 2 lbs. of large shrimp, peeled and deveined
- Salt pepper
- 2 ripe tomatoes, peeled and sliced
- 4 gloves of garlic, finely chopped
- 4 oz of sweet butter
Heaven In A Bowl (Peanut Butter Brownie Trifle)

Prepare brownie batter according to package directions
- 1 fudge brownie mix (13-inch x 9-inch pan size
- 2 packages (13 ounces each) miniature peanut butter cups
- 4 cups cold 2% milk
- 2 packages (5.1 ounces each) instant vanilla pudding mix
- 1 cup creamy peanut butter
- 4 teaspoons vanilla extract
- 2 cartons (8 ounces each) frozen whipped topping, thawed
Aussie Chicken

Rub the chicken breasts with the seasoning salt, cover and refrigerate for 30 minutes
- 4 skinless, boneless chicken breast halves
- - pounded to 1/2 inch thickness
- 2 teaspoons seasoning salt
- 6 slices bacon, cut in half
- 1/2 cup prepared mustard
- 1/2 cup honey
- 1/4 cup light corn syrup
- 1/4 cup mayonnaise
- 1 tablespoon dried onion flakes
- 1 tablespoon vegetable oil
- 1 cup sliced fresh mushrooms
- 2 cups shredded Colby-Monterey Jack cheese
- 2 tablespoons chopped fresh parsley

This seems like alot of work, but it's really not
- Jiffy Hollandaise Sauce:
- 16 fresh asparagus spears, trimmed of tough ends
- 4 1/2 oz can crabmeat, drained & cartilage removed, or meat from 3 or 4 king crab legs
- 1/4 c flour
- 1/2 tsp salt
- 1/8 tsp pepper
- 4 beef tenderloin steaks (about 4 oz each)
- 2 tsp butter
- 2 tsp cooking oil
- 3 egg yolks (large)
- 2 tbsp lemon juice
- 1/4 tsp salt
- dash hot pepper sauce
- 3/4 c butter
- freshly ground pepper for garnish
- chopped fresh parsley, for garnish
Grilled Spicy Calamari with Mango Sauce

Clean calamari and remove the tentacles
- Grilled calamari :
- 8 pieces fresh calamari
- Juice of one lemon
- 1/4 cup olive oil
- 1/4 teaspoons salt
- 1/2 teaspoons pepper
- 1/4 teaspoons chili flakes
- Mango Sauce :
- 1/2 cup cubed mango
- 1 whole mango
- 1 1/2 inch knob fresh ginger
- 1 tablespoons dark soy sauce
- 1 tablespoons cornstarch
- 1 tablespoons bourbon
- 1/4 cup water
- zest and juice of half lime
Turkey Scallopini with Capers and Lemon

Pat turkey dry and season with salt and pepper
- 1 1/2 pound (1/4-inch-thick) sliced raw turkey cutlets
- 1/2 cup all-purpose flour
- 4 tablespoons olive oil
- 2 garlic cloves, minced
- 1 cup chicken broth
- 1 to 1 1/2 tablespoons fresh lemon juice
- 2 tablespoons capers, rinsed
- 2 tablespoons chopped fresh flat-leaf parsley
Olive Blue Cheese Pecan Ball

In a bowl, combine all ingredients except for the pecans
- 1 (8 oz) package cream cheese, softened
- 1/3 cup blue cheese, crumbled
- 1/2 cup stuffed olives, chopped
- 1 tbsp mayonnaise
- 1/2 tsp worcestershire
- 1 tsp lemon zest
- 1 tsp hot sauce
- 1 tsp olive juice
- 1 green onion finely chopped
- 1/2 cup pecans, chopped and toasted
Chili Lime Squid

In small bowl mix fish sauce thru to sugar
- 1 lb squid cleaned
- 1 tbsp fish sauce
- 1 tbsp lime juice
- 1 tbsp oyster sauce
- 1/4 tsp Thai red curry paste
- 2 tsp sugar
- 2 tbsp vegetable oil
- 3 cloves garlic coarsely chopped
- 1/4 c coriander leaves ( if you can't find fresh, use 1/4 tsp ground coriander)
Beef and Burgundy Casserole

- 3 lbs. lean chuck or round steak cut in 2" cubes
- 2 Tbsp. butter
- 2 Tbsp. bacon fat
- 3 Tbsp. flour
- pepper and salt to taste
- 1/2 - 1 tsp. dried basil or 1 Tbsp. fresh
- 1/2 - 1 tsp. dried oregano or 1 Tbsp. fresh
- 1 clove garlic, minced
- 1 2/3 cups water
- 1 lb. tiny white onions, parboiled and peeled
- 1 lb. sliced mushrooms, sauteed (optional)
- 2 lb. baby carrots
- 1 cup burgundy or other dry red wine
- 2 Tbsp. butter
- 1 Tbsp. sugar
- 3/4 cup Madeira wine or sherry
- 1/4 cup brandy
