Peanut Butter Balls

Mix all ungredients together Roll into balls
- 1 cup of Peanut Butter
- 1 cup of rice krispies
- 1 cup of icing sugar
- 1 tsp. of vanilla
- 3 tbsp of soft margarine or butter
- shredded sweetened coconut
Christmas Cheese Balls

Combine all ingredients except pecans and parsley in a double boiler or large pan over very low heat
- 2 - 8 oz (250 ml) pkg. cream cheese (not light and not spreadable)
- 2 Tbsp. grated onion
- 1 - 1 lb. (500 ml) jar sharp cheese spread
- 1 - 8 oz. (250 g) pkg. cold pack cheddar cheese (Imperial is good)
- 3 oz. (85 g.) blue cheese
- 2 tsp. Worcestershire sauce
- 4 oz. (115 g.) sharp cheddar cheese, grated
- 1 cup chopped pecans
- 1 cup parsley, chopped
Lemon Bars

1.Preheat the oven to 375 degrees F (190 degrees C)
- 1 1/2 cups all-purpose flour
- 2/3 cup confectioners' sugar
- 3/4 cup butter or margarine, softened
- 3 eggs
- 1 1/2 cups white sugar
- 3 tablespoons all-purpose flour
- 1/4 cup lemon juice
- 1/3 cup confectioners' sugar for decoration
Hollandaise Sauce

Vigorously whisk the egg yolks and lemon juice together in a stainless steel bowl and until the mixture is thickene...
- 4 egg yolks
- 1 tablespoon freshly squeezed lemon juice
- 1/2 cup unsalted butter, melted (1 stick)
- Pinch cayenne
- Pinch salt
Maple Peameal Roast

Preheat oven to 350F/180C
- 1 whole piece of peameal bacon roast (3.5 lb/1.750kg)
- 1/4 cup maple syrup (50ml)
- 1 tablespoon dijon mustard (15ml)
- 1 teaspoon chopped fresh rosemary (5ml)
- 1/2 teaspoon freshly ground black pepper (2ml)
- 1/4 teaspoon sea salt (1ml)
Mommy's Shrimp

Combine all above ingredients
- 1/2 c olive oil
- 1/2 c lime juice
- 2 tbsp vinegar
- 1 tbsp chives
- 1 1/2 tsp salt
- 1/2 tsp dill
- 2-4 dash pepper
- 2 tsp capers
THAI RED CURRY COCONUT SHRIMP SOUP

Scoop the thick coconut cream from one of the cans and put into large stockpot set over med-high heat
- 2 cans unsweetened coconut milk
- 3 c chicken broth
- 2 tbsp Thai red curry paste
- zest and juice of one lime
- 1 tbsp brown sugar
- 1 tbsp fresh ginger
- 1 tbsp lemongrass paste
- 1 1/2 tbsp fish sauce
- 1 lb peeled and deveined shrimp
- 3 oz rice noodles
- 1/4 c chopped fresh cilantro
Mother Hubbard Pie

I like to add a bit of maple syrup to the squash puree 'cause that's what my family likes
- 2 tsp (10 mL) vegetable oil
- 1 onion, chopped
- 2 stalks celery, chopped
- 2 carrots, chopped
- 1-1/2 lb ground chicken or beef
- 1 tbsp all-purpose flour
- 1 tsp chili powder
- 1-1/2 tsp each dried thyme and salt
- 1/2 cup chicken stock or beef stock depending on the meat you use
- 3 tbsp tomato paste
- 1 tsp Worcestershire sauce
- 1 cup corn kernels
- 2 tbsp chopped fresh parsley
- 5 cups squash puree
- 1 tsp pepper
Oven Chow Mein

Brown ground beef, add remaining ingredients omitting bean sprouts
- 1 lb ground beef
- 2 tb butter
- 1 c chopped onions
- 1 c uncooked rice
- 2 cans (10 oz) mushroom soup
- 1 can slivered water chestnuts (if desired)
- 2 tsps Thai spice (optional)
- 1/4 tsp Pepper
- 2 c chopped celery
- 2 c hot water
- 1/2 tsp Salt
- 1/3 c Soya sauce
- 1 bag bean sprouts
Cheesy Potato & Cauliflower Chowder

This is really good with a dark rye or pumpernickel bread
- 2 tbsp butter
- 1 c chopped onion
- 4 c chicken stock
- 2 c diced, peeled Yukon gold or white potatoes
- 2 1/2 c cauliflower florets
- 1 c half-and-half
- 2 tbsp flour
- 1 1/2 c shredded Jarlsberg cheese (you can add more if you like)
- salt
- pepper
- 2 tbsp fresh parsley (optional)
